Shrimp Scampi and fresh Broccoli florets. My Honey is having the chicken and sausage gumbo I made today. I made the Scampi yesterday but my stomach was not up to eating real food then.
Sharing with my daughter and her family tonight since I had a ham bone to cook. Made dried navy beans with the ham bone, cole slaw, and for dessert fruit platter.
My Son-in-law is grilling steaks, sausage, salmon, and shrimp tonight but since they eat to late for me... I will have some of that tomorrow. I made the big pot of chicken vegetable soup yesterday and that's what I ate a bowl of a short while ago.
I fixed meatloaf tonight. Since Bobert really shies away from veggies any chance he gets, I took the two pounds of hamburger he had set out and proceeded to fix dinner.. So I diced an onion, added some frozen diced carrots, corn, and sweet peas. Threw in some garlic, pesto, two eggs, and half a cup of oatmeal, and mixed it all together. With all those frozen veggies I cook the loaf for about 1&1/2 hours at 375*. Success! He eat until he had finish his second helping!
Since Bab's soups always look so good, I'm making soup today...it's my last chance before the temps go back into the 70's again. I started out with a huge pot of vegetables, not even sure of everything that's in it but it's quite the variety, when the veggies are almost done I'm adding chicken...some breasts and some boneless skinless chicken thighs. I'll take the chicken out and make chicken salad and also shred some for chicken tacos with my low carb tortillas and of course plain old chicken for Pickles. The chicken will add flavor and protein to my veggie soup but it won't be in my soup when I'm eating it...also no noodles or rice.
Cleaning out the freezer soup. I started with srew meat broth and a quart jar of tomatoes. From the freezer I added green beans, corn, garlic, squash, okra, and sweet red peppers
Albertson's had their T-Bones for $4.99 per pound so today we are having grilled steaks, baked potatoes, cole slaw and baked beans.
