Saving The Potato Crop

    Our potatoes are sprouting. Really big sprouts all over them. So I took the box with the biggest ones, baked 25 of them and wrapped them in plastic wrap and put them in the freezer. I then washed, cut, and parboiled about an equal amount to put in bags in the freezer. When we first harvested the crop I had cut enough with the French fry cutter to fill many bags. Now we have a freezer full of potatoes and still have a couple of boxes left to do something with. Maybe dehydrate them? I dunno yet. Shouldn't have grown so many.

    My husband would say make potato chips...as he loves that. :)

    I think Sheldon said he'd done that first of all Babs... :)...I've been trying to think of something else you can do Sheldon , but I can't come up with anything.. o_O

    Potatoes originated in the mountains of South America. The Inca's cultivated them and today their descendants do too. They cultivate many different varieties in the same season so if one variety fails, some others survive. after harvesting they lay them out on the ground on clean fabric and mash them with their feet where they dry in the dry thin air, essentially freeze-drying them, then store indoors.

    @Sheldon Scott , have you tried canning them? They are just as good canned as they are when they are fresh.
