What's For Supper?

    I'm going to make a chicken and potato hash with green, yellow, and red bell peppers, brussel sprouts, and a mixture of black-eyed peas and green beans with jalapeno and bacon bits. It's what's for supper today at our house. :)

    Fried chicken breast ,cottage fries and ranch style beans. Yeep I need to go back to the store.

    Friday, I snuck over to our Smith's (Kroger) seeking some surplus breakfast sweets, and spotted what appeared to be a turkey drumstick under sealed plastic. Turned out to be half of a whole turkey, sawed cleanly in two, straight down the middle! Four bucks! The sweets forgotten, I took it home and found my wife to be pleasantly surprised.

    Sunday she roasted it up. Micro-roasted, that is, fast, juice-sparing, best-tasting way of turkey preparation. Total time: 50 minutes, 25 on either side. A 12 lb. bird, this half was right around 6 lb. It was luscious!

    Of course, some breast meat is left over, but thinking of my nephews arriving next week, we asked the meat guy at Smith's if they had any more half-turkeys. He went in the back, returning with a whole rack! We picked two of the biggest ones. Impractical to microwave two turkeys in halves both at once, so my wife did up one this afternoon, removed the meat and packaged and froze it (except the drumstick and thigh, of course, my meal tonight!). The other she will roast when they are here.

    Last night I had smoked trout in an orange and honey marinade..... but wait for this...I couldn't think what to have with it, so I opened a can of baked beans..lol... chopped up the fish and mixed it into the beans...weird combo, but it tasted fine :eek::D

    Last night we cleaned out the refrigerator of leftovers from several meals.

    For today we're having chuck roast with carrots, onions, and mashed potatoes

    Here is how I managed to eat my turkey and get fiber, too. Using my Ceramic pan, I "caramelized" (as my wife calls it) 1/3 onion, 1 Zucchini, big sprig (?) of Cauliflower, threw in cut-up drumstick and thigh, plus 1/2 cup of the wonderful gravy my wife prepares from the broth she makes. Wonderful!

    I put two roast in my large slow cooker around 10:00pm last night, and then this morning I set about pulling the beef apart. After that I put the pull beef into three freezer containers, and I left enough for lunch and dinner today. Well, as normal there was plenty of juicy dripping for gravy left over that I split into three batches.

    So I proceeded to make my fought over homemade beef gravy. Bobert tried it and wrinkled his nose. He said it didn’t taste right, so I put that away too. Then I called his mother to see what he was used to, she told me she only made the kind that comes in those packets, he had never had homemade anything before coming to live with me.

    It’s like a whole way of cooking is disappearing, and is now just old fashioned. :confused: :(

    Mostly just opening cans today. We have some leftover Spanish rice so we'll open a can of tamales and a can of refried beans, Cover that with shredded cheese and serve with tortilla chips.

    Sometimes a very simple meal like that Sheldon tastes better than a meal that took most of the day to cook. :)

    We had a roast with mashed poatoes and green beans. I am thinking tacos or my goulash tomorrow. Its going to be even coldet tomorrow.
