We had eggplant Parmesan for dinner tonight. I have not made that in a long time, and it is one of my favorite foods. Even Chipper thought it was good, and ate his eggplant right down. Now, both Chipper and Bobby are laid back and taking their after dinner nap.
oooh lord I was tooo hot to cook or eat anything much..but I was really hungry, so I ended up with just a cheese roll, eating out in the garden with a glass of peach tea ...I'll no doubt be hungry again before bed.

Fried ground beef and onions (50:50) on top of boiled rice. That's it. Both lunch and dinner. Sometimes I add green peas, or pasta sauce, or anything else edible around the house that I want to get rid of.
KETO Stuffed Peppers! Cauliflower Rice pulled out of freezer, along with a 1lb. chub of Turkey Sausage. The peppers were on Smith's Surplus rack, perfectly good, slight cosmetic blemishing, 4 for a buck! My wife fried it up in the old favorite pan of hers. Anyhow, the orange one had babies inside! Quite a bit left over, after filling the four halves. Added some shredded cheese. Baked at 325 F for 15 minutes, just trying to brown on top slightly. Scrumptious!
I had a package of broccoli slaw that I needed to use up, and didn’t want to make slaw out of it, so I steamed it along with some slivered almonds, sliced plum tomatoes, and frozen green peas. Added a thickened sauce from soy sauce and a bit of corn starch, ended up sort of like a chop suey, and was delicious. I am definitely going to make this again when I find the shredded broccoli on closeout. It was easy, healthy, and delicious !
Tonight we had sausage, broccoli salad, wilted greens, cucumbers in vinegar and grilled zucchini. Everything was from our garden except for the meat, and it was a delicious feast as far as I was concerned. Tomatoes and peppers are just starting to ripen, so they will get added to the menu sometime next week.
I made myself a taco bowl without the taco. Spicy kidney beans, a scoop of these Santa Fe Blend vegetables, salsa and a dollop of sour cream.
Very hot today so I got up this morning and made a little two potato salad for supper tonight and lunch tomorrow. Potato salad always seemed like such a chore for me until I went from cooking and peeling a five-pound bag down to two measly potatoes, doll house cooking! I'll add some marinated cucumbers, grape tomatoes and olives to round out the meal.
Boxed jumbala...with some extra tweaks...small red beans with onion and bell peppers....maybe cornbread.
