The red field peas actually turned out pretty good ! I added some brown rice, and then it was more of a meal than a soup, and the peas actually taste more like a bean than they do split peas, like you would use for spit pea soup. They even look more like a teen-tiny bean, and stay all in one piece when you cook them, instead of turning to a thick soup like the split peas do. As always, I made too much. Bobby is doing his best to take care of his share, but even so, I just gave a whole plate to the dogs, and I think that they will probably get another plate tomorrow. We are full !
I can't eat much these days... I still love food but I eat a whole load less than before ( not that I was ever a big eater anyway), so I often have leftovers which I freeze because I rarely feel like eating the same thing 2 days in a row
We had chicken that we butchered a few days ago, fresh tomatoes, cucumbers with vinegar, and colcannon made with our kale, potatoes. another meal totally created by us on our little farm.
Today is a big kettle of bean soup, with the ham bone, lots of veggies, and of course, the pinto beans. There will be plenty for today’s meal, and some to refrigerate for another time. I picked fresh basil and some of the Malabar spinach to add to the soup and it is already smelling really good. Bobby is working on that house again today (hopefully, they will have it sold soon, and he really will be done helping the owner with the work there), but the soup is mostly done, and just simmering along until he comes home to have our supper together.
I've never been a big fan of turkey, but yesterday I saw some thighs on sale and got a pkg., then was kicking myself when I got home for the 'impulse buy'....but decided to make the best of it. I made some dressing (https://www.tastesoflizzyt.com/grandmas-thanksgiving-turkey-stuffing/). First time in my life I did not use the packaged stuff. Used a plastic bag to coat the thigh in herbs, 'shake'nbake' style. Laid the thigh on the dressing in casserole pan, sealed it up in foil, and baked it for an hour at 375F. The smell was grand, and that's what I had for supper, and what I'm now finishing off for a 'midnight snack'.
Last night I had a ready made dinner... Scallops & King Prawns in a sherry and cream Lobster sauce.. Very rich but deeelicious...
That looks awesome, @Holly Saunders ! Lots of seafood, I LOVE seafood ! We are having shrimp and veggie stir fry tonight, and it is almost ready for us to eat. Lots of good veggies, so a healthy meal, too.
Tonight will be tomato soup and whatever else I can find cowering in the dark corners of the refrigerator.
We will be having ribeye steaks this evening. Our son and his wife will be coming over. The grands may be here or not; their parents may be here or not.... We do not know how many people we are entertaining tonight, so the number of steaks may vary, along with the amount of potatoes, veggies and salad.
