I made a big batch of my world famous chili yesterday. Now that it has spent the obligatory time cooking then into the fridge to marry the flavors ... it's chili for dinner tonight!
@Holly Saunders, you should see what happens when the entire family gets together. It is rare now that we are so spread apart geographically, but six children plus spouses, add twelve (soon thirteen) grandchildren and that makes 26 people including my wife and myself, and if you add the parents'-in-laws, and siblings-in-laws...it gets to be quite a crowd. I suspect the next time everyone gets together will be for my funeral...then it would only be 25 immediate family members unless more grandchildren come along before then.
Well I can imagine because I come from a very large family myself, and because like you we're all spread out all over the country, there's no large gatherings any more sadly..and I miss it...a lot!!
I am greatly wanting Tuna Casserole now for the longest time! Tonight might be the night! However, I keep recalling how wonderful my Mother's tasted, and for the life of me I swear she used no noodles or potatoes in the mix. I remember green peas, crushed potato chips on top, and cheese melted over that, but somehow, that sounds as though something important is lacking (not the tuna!). Any help? Frank
I think that you are on the right track, here is a recipe similar to the one you describe. https://www.geniuskitchen.com/recipe/no-noodles-tuna-casserole-270482 We used to have creamed tuna and peas over toast as a quick supper. I've also made the old tuna noodle recipe with a package of frozen broccoli in place of the noodles, not bad but definitely not tuna noodle casserole. These simple inexpensive recipes/meals seem to have been largely replaced by delivery pizza, rotisserie chickens and frozen entree's.
Today we are having shrimp and crab meat stew over rice, salad, and garlic bread. We boiled crabs this past weekend and I cleaned out what was left over and put them in the freezer until I could pick up some shrimp at Albertson's yesterday. Now today I will make our famous shrimp and crab stew and share some with my youngest daughter and her family who also love this.
My Grandma Bailey used to make tuna casserole, and what she used was crackers, tuna fish, peas, and maybe a can of cream of mushroom soup. It didn’t have any potatoes, noodles, or potato chips, and no cheese on top (but that would have been a good addition). It was actually more like a tuna fish meatloaf, and it was delicious !
I'm going to make a pot of chicken soup. I have some veggies that I need to use before I leave for my daughter's. I'll eat the soup with the veggies and then probably make chicken salad with the breasts....trying to empty my fridge. In fact I better do it now before it gets too hot...even though it will only be 84 today....
Beer and delivered pizza. We have been tto busy today and apt. is upside down. Carpet being removed tomorrw except for the two bedrooms. Then they are replace flooring in kitchen and bathroom. We had to move everything to shop spare room.
Last night we had Chinese take out... I had BBQ ribs and Egg fried rice.. hubs had chilli king prawns, Shrimp Fried rice and Chilli mushrooms When you folks get a take out ..do you get freebies..? I know in the Land of the ''free' you are all well known throughout the free world for getting stuff like free refills..but when you get a takeout, do you get free stuff too.. for example we get a Huge bag of Prawn crackers, and a bunch of Fortune cookies.. from our nearest Chinese take out...others give stuff like little cheap bracelets etc..( never eaten a bracelet but there's always a first time ) ..but on the whole we don't get anything for free from most places..
The other night had Kentucky Fried chicken...gave me trips to the bathroom..Yikes @Holly Saunders Last night we had roast, mashed potatoes and baby carrots. And since the chill is a coming on.. high Monday 47.. i see a beef stew, and homemade chicken pot pie in our future
