Sugared Cinnamon Pecans

    I don't do much baking because I can't do much eating.

    I still get the urge every now and then so today I made a batch of sugar-cinnamon pecans for Christmas.

    Preheat the oven to 250F.

    Lightly oil a baking sheet or line a baking sheet with parchment paper.

    Mix together in a large bowl and set aside:
    1/2 cup granulated sugar. I used granulated Swerve/erythritol.
    1/2 t salt
    1 t cinnamon
    1/4 t cayenne pepper

    In a small bowl beat until frothy:
    one egg white
    1 T water

    Add one 10 ounce package of pecan halves to the beaten egg white, stir to coat, drain with a slotted spoon and transfer the pecan halves to the bowl with the sugar mixture. Stir the pecans in the sugar mixture until the pecans are well coated and all of the sugar mixture has been absorbed. Spread the pecans on the prepared baking sheet and bake at 250F for one hour stirring every 15 minutes. Remove from the oven stir and let cool for approx. 15 minutes, remove from the tray. Let the pecan halves cool completely and store in an old covered tin lined with wax paper or a modern plastic container, your choice! :)

    Sounds interesting with the cayenne in it!

    I'm almost tempted to make because I have everything on hand.....but I better not. Need to pack, no time for messing in kitchen.

    Sounds good, Bea. Do you have a picture? Do they have a white coating when they're done?

    I wonder if it would work with peanuts. When I get a hankering for something sweet, sometimes I toss a little brown sugar in a bowl with some peanuts and eat them with a spoon, rather than just chuck peanuts. :rolleyes:

    Maybe they are too small or too round. lol

    No pictures.

    The ones that I made have a dark color when finished similar to roasted pecans and a sugary crisp texture when completely cool.

    I would think that any nut would work and also various combinations of spices.

    IMO the amount of cinnamon and cayenne should be tripled but it may be that my spices have been on the shelf too long.

    That's what I hoped they would be like. I'll do some experimenting, with peanuts, maybe tonight.

    Also, read a few recipes for Beer Nuts, they are a sweet/salty combination or maybe just go out and buy a bag.:)

    Bea, I tried the recipe with peanuts, only I got mixed up, and mixed the sugar with the egg white before dumping in the peanuts, then couldn't separate the peanuts, but went ahead anyway. Also used half brown sugar, and no pepper.

    It came out like chewy peanut brittle. Not pretty but really good!..

    The reason I don't just go buy beer nuts, is I'll eat them when I don't particularly want them, just because they're around.

    I wanted this recipe only for emergency situations. lol ... Will try it again, the correct way, in a few days. Thanks.

    LOL, an empty kitchen eliminates waist!

    I have to be pretty desperate to actually go into the kitchen and make myself a treat from scratch.
