Don.... Tell me about it... They are pure poison for us low carb people.. Yes the hotel had scrambled eggs, bacon, sausages, and rosemary home fries to which I ate almost the whole thing.. A Belgium waffle with the sweetest sugary syrup also.. A toasted bagel with peanut butter and strawberry jam as well.. A chocolate hazelnut Danish as well.. .Now, can you see why I hate those breakfasts..Its a love and hate thing.. I don't suffer from blood sugar problems but I guess mine was off the wall... After that breakfast, we didn't want to have any lunch.. Well. my HOK turned out to be a meatloaf made with minced chicken.. I added some onion, mushrooms, and an egg, herbs and spices... Steamed cauliflower was the veggie.. yogurt for dessert with splenda brown sugar..
Tonight (Saturday) I made some fish.. fillets of sole, breaded, and pan fried in butter, EVOO, and fresh dill.... Steamed broccoli.. S/F butterscotch pudding spiked with peanut butter.. Breakfast was the usual............... 3 eggs each..
Sunday..... B/S chicken thighs, dry marinated and on the BBQ.. I had some turkey bangers to go with the thighs as it wasn't enough A salad with my own dressing.. Breakfast was flapjacks with S/F syrup.. I added some frozen blueberries to the mixture at the last second to make blueberry flapjacks...
We went food shopping on Monday but I didn't feel like eating out.. I bought (on special) lots of B/S chicken breasts which I cut one in half (thickness) and cooked in a fry pan in a honey/garlic sauce... Steamed butternut squash with fresh dill in it was the veggie.. yogurt for dessert.. Whenever there is a special in chicken, I buy up half the shop.. This time B/S breasts were on special, so I bought 36 breasts.. Freeze them individually in a zip lock bag.. They were of the larger size which means one breast feeds the 2 of us.. B/S thighs were also on special and they were on the larger size which I like.. No fat on them.. They were 12 thighs to a tray so I bought 4 trays.. I freeze 4 to a zip lock bag and freeze them.. They also had turkey bangers (sausages) on special.. 4 long ones in a package (a tray) to which I bought 8 trays.. Again, I freeze them 2 to a bag.... I already have minced turkey and minced chicken in the freezer that was on special a few weeks ago.. I bought a total of 50 packages each being 450g... Hey, 450g (which is a pound) of either turkey or chicken for only $2.00 each is a super deal..
Tuesday worked outside and came in late.. About 5:15 when I came in.. Nothing prepared for supper, so quickly I put together a vegetable casserole with some tuna in it.. Voila !!! .......... Supper and it is a one dish meal that we both enjoy.. No dessert..
Wednesday was B/S chicken breast cubed, browned in hot oil, a ton of veggies added, sauce, with herbs and spices, served like that.... It was some sort of a concoction I made up as I went along.. We ate the whole thing.. White S/F chocolate pudding served with real whipped cream sweetened with Splenda..
Today Friday is food shopping day... now, I am having our daughter and her daughter up here for the long week-end.. They will be arriving up here in Massey on Saturday early afternoon and staying till mid afternoon on Monday.. I will be cooking for the 4 of us during this time except on Sunday night we are going out to a fancy lodge for our birthday.. My daughter's birthday was on the 7th of May and mine is on the 30th of May, so we will be having a double celebration.. I ordered a birthday cake for the occasion.. That means I won't be posting on here as they will be sleeping in the spare bedroom where my computer is..
I will be gone from posting for the next few days.. My daughter and her daughter are coming up here to Massey for the long week-end.. They live in Toronto.. They will be staying in the second bedroom where my desktop is.. I want to spend as much time with them as possible.. Sunday night we are all going out to a country lodge for a fancy meal.. It was my daughter's birthday on the 7th and it is mine on the 30th, so we will be celebrating both birthdays together..
Yesterday, I took some chicken drumsticks out of the freezer and cooked those and made coleslaw to go along with it. The chicken hindquarters are usually pretty cheap to buy, and then I cut them apart into meal-size bags of thigh meat and bags of drumsticks. Usually, I make “buffalo hot wings” from the drumsticks, but this time I just put them in the pan with some seasoning and cooked them, and they were good !
Yvonne... I usually put my drumsticks on the BBQ after dry marinating them.. I buy them on special and freeze 6 to a bag which is for the 2 of us.. At present, I must have about 15 bags in the freezer.. I do the same with thighs especially the B/S ones.. Again, 6 to a bag to freeze.. I must have about 20 bags in the freezer.. I do the same with B/S breasts.. One to a bag and I have about 40 bags in the freezer.. That sounds like a lot but I use them up pretty quick during the BBQ season which is now... Casseroles and stir-fry's also..
I love BBQ chicken, too, but Bobby does not care for it at all, especially with BBQ sauce on it; so we usually just cook it inside. Bobby prefers smoked meats to BBQ, and I don’t care for those; so cooking chicken in the pan is what is acceptable for us.
