supper was a vegetable casserole with tuna in it... I love those one dish meals...... S/F vanilla pudding spiked....
Gee......... I haven't posted what I am eating in a while..... Been a bit tied up here with gardening and other items.. It looks like I am the only person that posts the food of the day, but I will still continue as I find it keeps me honest with my intake of food..
That's OK Beth.. I thought nobody was reading the posts, so I hesitated for a awhile.. I will post my main meal as often as I can.. Now, we go to bed awful late which means we get up late.. We have a largerish breakfast and, NO lunch.. Breakfast is usually around the 11:00am to noon.. supper is the main meal around 6:30 to 7:00.. I usually post the supper one only.. Our breakfast is almost the same daily which consists of a 3 egg omelette with turkey bacon for my wife and 3 eggs for me with a sausage or cheese..
I'm such a meat-eater that low carb would probably be a "piece of cake." (Of course, I also love the "piece of cake"... so perhaps not!! )
Lon.... are you on low carb ???? That dish definitely isn't low carb by any stretch of the imagination.... otherwise, it looks very good !!!!
If you are not eating a low carb diet, why are you posting your food meals in the low carb diet thread, @Lon Tanner ? Did you mean for it to go in the regular dinner thread instead ?
Yes I did mean it to go in the Low Carb Thread because the meal with this particular pasta is low carb.
Lon... any kind of pasta is made with some sort of flour.. Now, flour, regardless what kind it is, isn't low carb.. Do you remember the 5 foods that are not to be eaten on low carb ??? If you are trying to put on a few pounds, good for you... Most of us on here are either trying to lose a few pounds or trying to maintain our weight.. Personally, I am one of those that are trying to maintain my weight.. No loss or no gain within a few pounds....
Supper last night was fish.. Fillets of salmon dry marinated with seasoning and dill and pan fried in butter and EVOO.. Steamed cauliflower with shredded parsley on top.. Sliced yellow tomato from our garden.. S/F vanilla pudding spiked with a bit of cinnamon and a hint of nutmeg .....
Supper tonight will be B/S chicken thighs on the BBQ.. I will dry marinate them first with some herbs and spices.. Steamed carrots cut into sticks and served with butter and parsley.. Frozen blueberries with heavy cream and some splenda.. The blueberries will freeze the cream to make like an ice-cream..
Supper was a stir fry in my wok.. I had loads of onions from the garden, lots of mushrooms, and too many broccoli.. A stir fry seemed to be the answer.. B/S chicken breast cubed and marinated in a honey/garlic sauce for a few hours.. Onions, mushrooms, broccoli, and garlic.. I used vegetable stock and a hint of soy sauce for the liquid.. It turned out fabulous.. We totally pigged out and ate the whole thing.. NO rice or filler to go with it.. Just stir fry... Truly a low carb meal......
Tonight was a very easy night for supper... My chicken burgers frozen on the BBQ as well as each one large turkey banger.. Steamed cauliflower ... S/F butterscotch pudding spiked...
