Supper tonight was again something else.. I wanted to make B/S chicken thighs in a sauce but I don't have any in the freezer.. Instead I took out 2 breasts and made them the same way, in a honey/garlic sauce on the stove... I cut them in half in the thickness.. I had some coleslaw that I had to use so we had it with the chicken.. Frozen blueberries with splenda and heavy cream.. let the frozen berries freeze the cream and you have blueberry ice-cream... Pot of tea...
Looks like tonight will be soul food......... MEATLOAF ..... I took out of the freezer a package (400g) of minced chicken to make us a soul food supper.... I have lots of broccoli to which I will steam some.. S/F pudding spiked with something and served with heavy cream.. I make my pudding with 10% cream instead of milk.... Pot of tea... Breakfast: I don't post this often as it is almost the same every day............. 3 eggs each... Lunch is also much the same daily.....NOTHING......
supper tonight (Thursday) was my premade frozen chicken burgers on the BBQ... I felt there wasn't enough (of each one burger) which are almost 1/2 pound each, so I added each a turkey banger..... I chopped up some of the carrots from our garden, steamed them, smashed them, added some butter, and served them...
I was supposed to go food shopping today BUT my dear wife had a really bad night so I decided to postpone the food trip till tomorrow.. Her well being is more important than getting food, which I have plenty in the freezer anyway.. We won't starve for sure... Supper tonight will be some frozen fish of some kind frozen that I will thaw and pan fry.. I still have half a cauliflower that I will steam.. S/F pudding spiked with something.. pot of tea...
Again I didn't go food shopping but tomorrow I will go for sure.... supper was chicken drums dry marinated and on the BBQ... A turnip loaf was the veggie.......... Turnip from our garden... S/F butterscotch pudding spiked... pot of tea... Breakfast was pancakes made with wheat gluten flour....
I take a turnip, peel it, cube it, steam it till soft, mash it in a bowl till it looks like mashed potatoes, add eggs, seasonings and herbs, mix, put into a loaf pan, bake at 375f till the top starts to get golden (about 45 minutes) and the sides are pulling back... Remove from oven, with a spatula go along the sides to loosen from the sides of the pan, let sit for a few minutes, and then turn upside-down unto a plate... It is now like a loaf and it is ...... a turnip loaf.... I also add (optional when mixing) some frozen green peas making it quite attractive when serving.. The amount of turnip will determine the eggs.. I use 2 large eggs for a loaf that will serve 4 people..... about one egg per 2 cups of raw turnip before steaming.. I have also added some scraped carrots as well as the peas.. It makes it a bit different and talk about a colourful loaf upon cutting it..... PS..... The turnips I buy in the store are yellow inside..... the turnips I plant in my vegetable garden are white inside and somewhat sweeter than the yellow ones... It just happens, I used the turnip from our garden, but that was the last one I have... From now on, I will be buying my turnips..... NOW .... I don't know the difference between a turnip and a rutabaga ....... Is there a difference or do they have two names....Both are purple tops and the ones I grow are also purple top...
Wow, that's a lot of work for turnips. I usually boil the diced turnip root with some greens and a little bit of smoked meat. Good old southern comfort food with a hunk of cornbread. I imagine that the "yellow inside" ones you mention are indeed rutabagas; they are very similar in taste/texture but for the color, and are a little sweeter IMO. I love all the root veggies. Thanks for the turnip loaf recipe!!
Its not really that amount of work... Just steam the turnip, mash it with herbs and spices, and put it in the oven..... !!!!! It is time consuming, I agree, but for something we enjoy, its worth it especially when there isn't any left over...
I went food shopping today and by the time I got home I was tired.. I bought a bargain on B/S chicken thighs that were on special.. I think I will have enough of them for a long while.. There were 9 thighs to a package for $5.00... I bought 6 packages..... I put them 5 or 6 in a freezer bag... I used 4 for supper tonight.. marinated them with some garlic and seasoning first and put them on the BBQ.. I was too lazy to make some veggies so we had coleslaw.. I also bought some peaches (peach halves) in their own juice which were absolutely delicious.. They came in a very large jar.. about one gallon size.. Again on special for $2.99 a jar.. That is what we had for dessert......
I gained 4 pounds last month and am on a controlled carb diet now. I also love butter too much, so I have to watch it as it is much too difficult to lose weight at my age.
Lois.... Don't give up.... Low carb is the answer but you MUST give it time.. IT WORKS IF YOU WORK IT ..... DRINK LOTS AND LOTS AND LOTS OF WATER DAILY... Butter is fine but what do you put the butter on ?? Not bread I hope...
Last night for supper was again something different... We had someone visit us and left late in the afternoon, almost 6:00pm.. Naturally I didn't have anything prepared for supper, so I had to think fast and do something fast and easy..... Vegetable casserole with tuna is always fast and very easy.. it is also extremely tasty and we like it... for dessert, I served some stewed peaches with heavy cream.. pot of tea...
I do drink tons of water every day, Steve. As for butter, I put it on everything and in most of my soups. I'm beginning to pull back on that as well and I do not eat desserts and the like.
