Supper tonight Friday was as I said... A BBQ chicken bought at Wallmart.. A chicken is good for 2 meals for us as I like the leg and Annmarie likes the breast..
Today Saturday I have decided to make a super special supper.. Its been a while since I really got down to cooking something different... It will be a casserole for sure.. I don't have very many veggies, as our food shopping day will be on Sunday this week, but I will try to do my best...
Well, don't ask... Saturday supper was supposed to be a fancy one that I was going to make... We ended up eating the other half of the BBQ chicken... I didn't cook anything... Today Sunday, is food shopping day.. I will most likely be buying something for supper while shopping...
Again we didn't go food shopping today as Annmarie was a bit under the weather and I decided not to go out and leave her alone.. I made a lovely casserole with a ton of veggies, minced chicken, lots of cheese.. It was so good that we ate like a bunch of pigs... Overate for sure.. Food shopping tomorrow, …. Monday...……………………………………………. maybe !!!
Went food shopping today and they had B/S chicken thighs on special... I think I over did it this time.. There were 8 thighs to a package and I bought 6 packages.. I put 4 per freezer bag and froze them.. I now have 10 bags in the freezer.. That's 10 meals.. I kept 4 out for our supper that I made in a honey/garlic sauce .. coleslaw... No dessert today.. Pot of tea...
A friend came by today and brought us a container of soup she made.. It was simply delicious and it made a change from cooking.. It was a beef and barley soup with all kinds of veggies in it.. I made us each a banger on the BBQ to go along with the soup.. Stewed peaches with heavy cream for dessert.. Pot of tea....
Supper tonight, Wednesday, will again be ….. HOK..... I will post what I will be making when I figure it out...
No... A banger is another word for a large sausage.. I buy my sausages from the local butcher who makes them by hand and he only uses either chicken or turkey.. He makes them in either mild which I like, hot which I won't touch, or honey/garlic which I like but not very often.. He uses absolutely NO filler in them... Only pure meat and some fat... He makes them about 6 inches long each and when I order them from him, I ask for 24 at a time.. I freeze them 2 to a package in a zip lock bag, separated.. That way I can remove one if I need it or both.. I put them on the BBQ frozen.. They brown nicely outside while the inside is cooked but still not dry..
Supper tonight was a bit different.. I took B/S chicken breast, cut a pocket in it and stuffed the pocket with a mixture of veggies, herbs and spices, and cheese.. I baked it in the oven and it was delicious.. a bit gooey because of the cheese, but delicious..
Supper tonight, Thursday will be chicken drums on the BBQ.. Butternut squash, cubed, steamed and smashed with butter.. I will keep a slice of the squash to put on the BBQ as well.. Some sort of dessert.. Pot of tea for sure as usual..
NO SOUP TODY....... Tonight will be fish.. I have some fillets that I will bread and pan fry.. A salad always goes pretty well with a fish meal.. S/F pudding spiked with heavy cream.. Naturally, a pot of tea...
Supper tonight was a stir fry in the wok on the stove... B/S chicken breast cubed and marinated for a few hours in a honey/garlic sauce... Loads of veggies and stock for the liquid.. Pot of tea..
We call sausage a snag. Not sure why. Steve does your butcher use preservatives or sulphites in his sausages. I find it hard to find pres/sul- free snags at my supermarkets. Usually those advertising this are specialist health food stores and the wife wont shop there. We often have home made veggie soup in winter. Beats the hi sodiom and sat fat canned soups. Tho Campbells now sell a low salt, sugar and fat soup variety. Have to pay for it tho. Bloody annoying that the healthier the food the more you pay for the privilege.
