I took a break from my Assisted Living breakfast and tried something different this morning. It was quite good.
@Lon Tanner Did you read the ingredients? Fat content, cholesterol etc. I looked at them and thought they were too high.
I had me toast with butter and Apple butter, oven cooked bacon and coffee. Have not had apple butter in years. Tasty
Oatmeal so thick that if I turn the bowl upside down it doesn't come out. I don't need a side for that
I do eat more of it in cold weather. Just had a hankering for it today. I do put some milk and a little splenda on it tho.
I eat odd at times...I see no need for breakfast foods every morning. Have been up since 2:30 am power went out hour later. Anyway I ate left over zucchini potatoes with ground beef and cheese from supper two night's ago. Oh Lordy that was so good..and will stay with me until lunch time
This morning, I made a zucchini pancake, and Bobby and I shared it. It was a large one, and about an inch or so thick, so not like a regular pancake. Before we went to the fitness center , we stopped by the Farmer’s Market, and got some fresh peaches and huge tomatoes. So when we got back home again, I cut up some of the peaches that had little over-ripe or bad spots, and put them in a bowl with just a dab of sugar to sweeten them. Yesterday, I made some sugar-free instant pudding with cream cheese in it, so it is almost like cheesecake. I put some of my Raisin Bran in a small dish, added the fresh peaches on top of the cereal, and then topped it off with a nice dollup of the cheesecake pudding. This is seriously delicious ! ! We are definitely going to have this more often. It is fine for either breakfast, or as a light lunch, or a snack food, and fairly healthy with the fresh fruit and bran cereal.
