Stopped on our way home and picked up BBQ plates from the local joint. I got ribs and sausage, potato salad, baked beans, and a homemade roll. SO good.
I just look at my menu and will go down to the dining room at 5:30 PM and have Beef Strogonoff. I will have Pumpkin Pie with vanilla ice cream for dessert.
Split pea with ham soup, made in the Instant Pot. Crusty french bread made in the bread machine. Banana pudding in the works for later.
I had some thick pork chops in the freezer, so I thawed them out, browned them in a skillet, and tossed into the crock pot with sliced onion, white sauce, sliced mushrooms, and a bit of beef broth. It smells really good in here. I'm going to make rice to go with the gravy, and probably some green beans.

Tonight I just finished a Beef Stir Fry Dinner. Beef was ver tender and sauce was sooooo good. Meals are not yet Pre COVID 19 quality, but they are getting there.

Hey, my oncologist told me to "eat whatever I can" so I'm taking him up on it. He doesn't want me to lose any weight during treatment, so pass the ice cream!!
