    My sister-in-law sent us a pot of red beans and rice, sausage, and cornbread. Hubby made a salad and we pigged out.

    I love Greek food. Have you ever tried dolmades (stuffed grape leaves)? You should just once if you have not.

    Some time ago I got an urge for a gyro that would not go away. There is nothing near me that would suffice, so I drove 45 miles one way to a Greek restaurant near the state capital. It was worth it.

    Hereford Brand canned beef chunks in gravy
    over heavy buttered Idaho instant mashed potatoes
    with olive oil sauteed green beans laced with bacon bits.

    Gonna have the steak dinner I thought I was gonna have last night. My russet was a little soft and the sour cream was shy of the expiry date but had been open for a while. I defaulted to a salad & chicken pot pie last night, and made a quick grocery store run.

    Tonight is Beef and Noodles, which is a favorite around here. Recipe goes something like this: I put about 1.0 - 1.5 lbs of chuck, cut into pieces, rubbing in favorite seasonings, into bottom of Instant Pot on top of bottom grate. Add 2 cups of beef broth, 1 tbsp. worcestershire sauce, 1 tbsp. brown sugar, and 1 pkg. onion/mushroom soup mix. Cut up and add 1 whole onion and 3-4 slices of smoked bacon. Put on lid and pressure cook on high for about 1:14. Carefully release steam, remove lid and add noodles in proportion to juice. Repeat pressure cook for 10 minutes and it's ready. Having some bread to soak up the juice is a plus.

    Baked side pork with salad, which is:

    Spinach
    Tomatoes
    Avocado
    Mushrooms
    Onion
    Bacon pieces (wilt spinach with hot fat)
    Garlic powder, parsley, oregano
    Salt and pepper

    Dressing: Olive oil and vinegar

    grass fed beef pattie, new red potatoes/carrots/broccoli medley--all organic and home grown. This time of year, I am impressed with how self sufficient we are and wonder how normal people can afford good food sometimes when I see prices at the store.
