Low Carb: What Are We Eating?

    It is not necessarily the fact I dropped low carb, but the fact I am now eating healthy and watching my carb intake..
    Eating healthy is vitally important whether you are low carbing or not..
    I don't want to get into the position where I am trying to lose weight, but rather maintain my weight.. Yes I will slowly try to gain a few pounds, but I won't go crazy over it.. It will come when it comes..

    Hi Steve, I can't imagine what that's been like for you :( It sounds like you have a good plan to take it slow. I do know how hard it is to "go" slow, at anything, but the more I learn about my organs, the more I want to go easy on them ;) Never thought about that stuff much when I was younger.

    Denise... For about 6 weeks, I had tubes sticking out of my stomach that at night I would connect to a feeding bag and pump that would feed me during the night.. That wasn't pleasant at all.. Tubes sticking out of my stomach for many weeks.. I couldn't wear any pants as the waist was across the tubes..
    To make matters worse, I had to sleep on at least a 30 degrees angle up so the feed wouldn't go into my lungs and drown me while I was sleeping.. I bought a wedge pillow for that..
    During the day, I was only allowed to have liquids.. Nothing solid.. Naturally I lost weight.. Now I would like to gain back a few pounds that I lost..
    I MUST go slowly in order not to end up back in the operating room again because my stomach can't take the food..
    Slowly to recuperate is the way I am going.. We get sick in a matter of seconds and it takes almost forever to heal..

    By the way.....
    I didn't tell you what the meaning of... PAIN... is when you have those tubes sticking out of your stomach....
    The were NO pain killers that would work as I couldn't swallow any pills.. Nothing in my stomach...
    I turned to marijuana which is legal here in Canada.. That did the trick all right.. I used the gummies which worked perfectly.. I never told anyone on here till now..

    The pain has gone ever since the tubes came out..
    nothing really severe since then... so far, so good...

    I felt like i was short of something in my diet.. I don't know what but I am often weak..
    I made for supper tonight some beef liver with onions.. I had way too big a portion, but I ate everything.. I had asked the butcher for liver sliced a good 1/2 inch thick and about 1/2 of a pound.. don't ask....
    He gave me 3 thick slices of beef liver which weighed 810g which is way too much for one person at one meal..
    I cooked the 3 slices and they were simply delicious with lots of fried onions.. I like liver and I try to eat it about twice a year.. I like it med rare.. It is high in iron.. I know that organ meat is high in cholesterol, but I don't have that problem..

    Onions and liver are on my plate once in awhile, I love them. How do you feel after eating them because I'm thinking your body was craving that meat;) Sometimes I'll over-eat if it's on my plate but I weigh my meats (especially) if in doubt about the portions. Small, kitchen scale ;) If I over-eat, and don't feel so good I try to take a walk for one thing, just a slow one and I'll also drink a tbsp of ACV (apple cider vinegar) But I do not overdue the use of ACV as I shoot for PH balance in my stomach as I had pretty bad Acid Reflux until I got that under control with proper foods to avoid it, and also, not lying down to sleep at night until atleast 3 hours after eating anything.

    Denise.. I also love liver even though it is a bit high in cholesterol, I don't care as my cholesterol readings are normal..
    Yes I overate on that liver feast.. 810g is a large portion.. I usually wait 4 hours after eating before bed..
    Today I feel a bit more energetic, if that is from the liver or not, I don't know..

    Hi @Steve North Cholesterol is an interesting topic for me. Mine is very high, and has run high as long as I can remember (in adult-hood anyway). I take more interest in the information I've listened to, from among others, Dr. Benjamin Bikman. This morning I read that it's believed by some (with several many studies done as well) that inflammation causes cholesterol, not dietary foods.

    I felt pretty relieved about it because mine is high, but yet I am eating what I believe is a very, healthy diet. Which includes anti-inflammatory foods, and a couple of supplements. I am my own guinea pig though so I don't suggest my methods, or push my beliefs on anyone else. Just almost like a hobby for me to keep studying things like this ;) I know time may tell if I'm dead wrong, pun not really intended, but whatever ;) I did have what we think (doctors and I) was a TIA August 2nd, but no one has found anything (tests) that indicate that as being truth. Doctor's that don't give up until there's nothing else to do but pray, are only in the movies.

    I will just continue to eat as much local, organic foods as well as anti-inflammatory types, as I can. I heard yesterday, again, that Turmeric is awesome for inflammation. I'm getting capsules of the organic juice I had used just a bit of before.

    I also am working on PH balancing (but need to buy some litmus paper first to test) or making sure it is in the good zone, Denise

    Hi Denise........ With the holidays upon us, we must enjoy them to the fullest.. Watching what we eat is important however enjoying this time of the year is also good for our moral and spirit..
    Lets not go overboard but lets do what we have to do with some restrain...

    I for one will be eating what I would normally eat this time of the year, but perhaps cutting down on the portion size..
    I don't drink any alcohol, so that is one good thing for me with my stomach, however I do love eggnog which is rich.. I have been buying eggnog for the past few weeks and enjoying it to the fullest..

    I will be gone from here for a few days as we are having our son stay with us and the computer is in the 2nd be3droom where he will be staying..
    Nevertheless, with the holidays upon us, the best i can say is.....................
    EAT DRINK AND BE MERRY, AS AFTER THE HOLIDAYS, WE ALL WILL DIET.....

    JUST DON'T DRINK AND DRIVE....!!!!!!

    Thanks Beth.. He will be here tomorrow during the day.. He is leaving Ottawa at around 10:00am and it is about an eight hour drive up here for him..
    The weather, as I write this, is snowing but tomorrow is supposed to be sunny but cool with the daytime high at -15c mark..
