Low Carb: What Are We Eating?

    If you noticed, I changed my weight in my signature to today's weight..
    I am trying to gain some weight but my body seems satisfied with my present weight, so I will stay there till I gain again slowly..
    Meantime I am eating a balanced diet at every meal..
    I will go back on a low carb way of eating very shortly just to maintain my weight.. I will be on maintenance as I have reached my desire weight.. Till then, I am still eating almost everything except what I cannot eat because of my stomach problem..

    Hi Steve, I'm alone so it's easy for me to eat the normal way I do. I did have a good Christmas, and birthday though because I just chose to. Watched my fave movie, Grumpy Old Men, and a couple of the Hallmark movies ;) Started walking even though it's colder this year, than what I am used to, so definitely double layers, the works ;) Our winds are icy cold too here on the coast. It got down to 34, we had some snowfall, no stick type, at about 37 if I remember right ;) but that was the day after Christmas. Even got surprised with gifts from 4 of my neighbors, some even hand-made

    I have a question....
    How much left over turkey can one be expected to eat ???
    The turkey from our Christmas dinner is still around.. I have been eating so much turkey that I am now starting to grow some feathers..
    We made a casserole with some and we still have some leftover..
    Oh well, I guess some would be happy to have leftover turkey so I should just shut-up about it...

    I use one of the FoodSaver gadgets to freeze some left-overs. Foods will stay great for quite a long time, but I usually eat them up before they are in the freezer very long ;)

    I love the FoodSaver and my sister kept after me until I got one, never have regretted it. One thing I learned was to first put things like Salmon for example, into a ziplock baggie first, getting as much air out as possible, then putting into the FoodSaver wrap. If I don't do that, it sucks all the juices out of it, duh!! :p:eek::( Didn't do that twice ;)

    @Steve North .. that is why we do not do traditional dinners. Way too much crap none of us need. :)

    Heidi... I agree with you 100%... I have leftover turkey that is in an air tight container in the fridge for a week and i am scared to eat it as it might be off.. The best thing i can do is throw it out in the garbage..
    Way too much food was made..... What a pity...

    I slice leftover turkey, put two layers of wax paper, a layer of turkey, repeat. Then freeze it. When I want a turkey sandwich, I just take out what I want and thaw it.

    Yes Shirley, but it has been over a week since I made the turkey..
    I won't take any chances about it being no good and get sick.. I will throw it out in the garbage.. Not worth the risk..
    I should of frozen some last week but I didn't think........................... Must be old age !!!

    As you know, I am trying to gain a few pounds but it isn't easy..
    My body seems to want to sty at my present weight which is around the 175 pound mark.. I would like to go up about 10 or so pounds.. Perhaps it will come eventually.. Meanwhile I am eating healthy and well balanced meals.. Not going crazy with carbs, but not avoiding them either..
    I still can't eat cabbage or anything in the cabbage family like broccoli, cauliflower, and brussel sprouts.. They create too much gas...

    I am now trying to eat a bit more in variety of foods.. My doctor now told me to try broccoli, but cooked, not raw..
    Cauliflower will be next.. He also told me that sauerkraut is very good for me and would be easy on my stomach.. I will be buying some next food shopping day.. I love it but it is very salty..
    As far as my weight goes, he told me not to worry about it and just keep on eating good healthy meals..

    Steve, try some kefir. It is good for your tummy and good to the taste. Mix it with a sweetener, add some blueberries and yum - yum.

    Shirley.. What is kefir ???... Remember I live in a small village where some foods are not available..

    It is similar to yogurt , @Steve North . Here is a really short video that explains the difference between the two. Kefir is not as thick as yogurt, and you drink it , rather than eat it with a spoon like yogurt.

    OK... I now know what kefir is...... HOWEVER ..... I was also told to limit my intake of milk, cream, ice-cream and yogurt as they will also cause some gas in my stomach causing me to fart even more.. Not to eliminate them, but to limit them.. Later on when I am completely healed, I will be able to digest those dairy products, but for now, hold off on them...
    I don't know if I mentioned it or not, but with the operations I had, I can no longer burp up gas as everyone does but rather I fart out the gas instead.. I know it can be embarrassing at times, but that is what was necessary to save my life......
    My wife says it is good that I am still here regardless of the situation.. Gas must exit the body somehow.. Everyone burps while I let out the gas by farting.... She says, "so what"????

    I was wondering with all the farting of gas that I do if I should change my name to ......... "Fart Head" ........ LOL

    I am still restricted from certain foods and most likely will be for the rest of my life.... They are..
    -Any carbonated drink..
    -Citrus drink like orange juice or grapefruit juice..
    -Alcohol..
    -Extreme spices.. Mild spices are OK.. No hot peppers..
    -Nuts.. Peanut butter is OK but no raw nuts..

    Just to name some.... It isn't a big deal with those restrictions..
