Butter is ridiculously high! $6.29 regular price for Land O'Lake butter at Kroger. I try and wait till it goes on sale, which is still high. I look at the expiration date on the butter and purchase the ones with the longest date out. I put mine in the freezer too. I think they are good up to 6 months or so.
I'm thinking that I should put the butter in a vacuum-sealer bag and seal it up before freezing. I might get another couple of months that way.
I don't know about freezers above the refrigerator but in a chest freezer it keeps for months just in the paper and box it comes in.
That's how I freeze it now; just in the box it came in, placed in my large freezer in the garage. I know it does fine in there, but I haven't tried keeping it for more than a couple of months. According to one article I read, as long as it is packaged well it can keep for up to a year. Since I have plenty of vacuum bags I might go ahead and vacuum seal some of them.
I had a frozen entree of peppers and rice and sausage and tomatoes. I love that stuff, it usually bites me about the time I'm ready to turn in or fall off to sleep. I forgot to buy some antacid for those spicy dishes. It was a pleasant surprise this morning while shopping, my dollar store after three months finally stocked the Bayer Back and Body pain killer. It is the only thing I have taken that actually stops my neck and knees from hurting. The store next door to the dollar store don't stock them either. There were only two bottles of 24 pills each and I bought both, had there been more I would have not bought the candy and bought that third bottle also.
I attend the annual Member Advisory Meetings with me electric co-op, and they feed us. Tonight we had: -Salad -Pork BBQ -Slaw -Mac & cheese -Green beans -Apple pie -Brownie
One of the women who works for the co-op lives a couple of counties south of here and brought the apple pies with her. The woman who owned the pie shop recently died at 102, and her daughters keep the place running. Of course, if Mom was 102, "daughters" are not 25. The pie [said with a rural southern accent] was very good. The brownies & corn muffins may have been from the same place...they were not store-bought. I'm about nodding off here.
Husband had the last of the chili on a baked potato. I had a ham and swiss sandwich on a crusty roll.
I just picked up a kilo roll (2# 3oz.) of Amish butter. It's shot up to about $5.90/pound. I might buy another kilo before it goes up even more.
