    It's Chipotle day. I'm having carnitas on a Chipotle Bowl, chips and queso, and beer.

    I had leftover homemade chili with cornbread for yesterday supper. I think I will finish it for lunch today, then face the tough decision of what to do for supper this afternoon. It is past 8 AM now and time for me to finish off my key lime frozen pie topped with whole milk yogurt for my mid-morning snack. :)

    It's cold and nasty today so I'll make some chili and cornbread. Or I might try making some stuffed peppers using leftover meatloaf.

    Usually ground chuck. I decided to forego the chili and concoct some stuffed peppers with leftover meatloaf, leftover rice, onions, garlic, tomato sauce, bell peppers and grated cheese.

    I took a nap and fell into a deep sleep waking up thinking it was 7am, jumped up and fed cats outside before the rain starts. Now I have to decide what's for Dinner then try and go back to bed when it gets much later. I hate it when I get up for nothing. The cats outside liked that late meal :(

    Just had a burst of thunder maybe the rain will stay long enough to help me go to sleep again.

    On our way home from the Medical Center we decided to stop at Long John Silver's and have some grease with fish and cole slaw. :D:D It was actually pretty good; very fresh and crispy with just the right amount of artery-hardening.

    That's interesting. I stopped by my local seafood guy today and bought some flounder to air fry tonight.

    I went to the LJS the next county over a few years ago (it is co-located with a KFC so you can order both/either at the same counter.) The LJS was kinda lame...it was soggy. I wish Arthur Treacher's was still around.

    Yeah, LJS is definitely hit or miss. Funny but I was sprinkling my fish with malt vinegar and asked my husband if he remembered Arthur Treacher's. The fish was good today but they were really stingy with the cole slaw.

    My favorite back in the 70s was the Churches Fried Chicken order of a little bucket of fried clams. Never had another good fried clam after the Churches chain slowly drifted away. Chicken wasn't bad either, the helping or sizes were a third larger than the other famous fast chicken places. The early 70s was the last of the good KFC fried chicken. It actually was the original recipe which has been thrown out for decades now. Talk about greasy I haven't a piece of KFC in 30 years just because it was so bad.
