My new favorite treat is Kind Bars. They have all sorts of healthy things in them, and are delicious. As far as cooking and eating, I grilled up thinly sliced eggplant yesterday. When I cooked it on the grill last year, I sliced it lengthwise, but this time I wasn't thinking, and cut it into circles. It took longer to cook, since the slices were smaller. I brushed the pieces with olive oil and added a little salt and pepper. I'll eat on that for the rest of the week. If I'm feeling better later I'll make another batch of ricotta, but if not, I'll do it later in the week. I don't want to make it and then end up wasting it, which has happened in the past. I'm looking forward to ham steak and pineapple for Easter dinner, probably with some form of potatoes and carrots.
@Diane Lane , I almost picked up an eggplant yesterday at the market due to you and your yummy sounding eggplant and bacon sammies, but I passed because I couldn't decide on eggplant parmesan or baked/grilled slices. I haven't made eggplant parmesan in many years but I love it dearly.
Make both, @Ruby Begonia! I'll be using the grilled slices for the sandwiches this week, as well as for snacks. I love eggplant parmigiana, but it's really a two step process, so you could make double the amount, and use half up front, and then use the rest for the parmigiana, since you have to cook it first, anyway. That's what I usually do when I make it. If you used the grilled slices for the casserole, there'd be a few less calories, and I'm sure either way, it would be delicious! I still have another one in the fridge. I could make that later in the week and use the homemade ricotta to make the parmigiana.
Diane, good thinking! I also admire your cheese making, I've never attempted that. I guess I'll make just a little of the parmigiana, and the plain slices also, next week.
Made a simple tuna casserole for supper on Wednesday.. Add loads of veggies and cheese... I love those one dish meals...
Had some of the Moose meat that was a leftover for supper.. We almost are finished with that monster of a hunk of meat.. Steamed buttercup squash with butter..
Thanks, Ruby, it's so easy, you really should try it if you like Ricotta. I wish I'd known years ago how simple it was to make soft cheese. I'll experiment with other types if I ever get a better kitchen, or I might get a burst of energy and try it here someday. I still haven't made it or used the other eggplant, so I might hold off on both until next week. I had another eggplant sandwich yesterday, on this one I used the eggplant and tomato, didn't have bacon, so sliced the little breakfast sausage links lengthwise so they'd be flatter, and added some sliced avocado.
Made some chicken burgers with minced chicken and put them on the BBQ... a salad with my homemade dressing..
tonight is Sunday.... Easter Sunday.... that means I still have NO idea what to do for supper.. How about a steak on the BBQ.?.?..... I have a turnip that I can make a baked turnip casserole with... We always like that veggie.. how about a desert to go with it.. I have some boxes of white chocolate S/F pudding that I can whip up in no time.. I use cream instead of milk.. Much richer and tastier.. I can add some frozen blueberries in the mixture making it different.. I also have some frozen raspberries that I can add a few as well.. AT LEAST THERE WILL BE NO LEFTOVERS !!!!!!!!!
For supper tonight (Monday) I am looking at some B/S chicken breasts in the skillet with a honey-garlic sauce.. A couscous on the side would go well with it.. Steamed broccoli..
