We occasionally pick up Popeye's chicken, but that's about the only kind we buy. I like the spicy chicken and their sides.
-Salad -Air fried flounder -Steamed broccoli -Mac & cheese For those who are interested: The flounder was just OK...needed more flavor. The recipe called for oil to be mixed in with the bread crumbs (after an egg wash) so the coating would brown. Next time I'll use ghee (reduced butter fat with a high smoke point) and add flavoring to the ghee and/or the breadcrumbs. Other than the blandness, it turned out OK. The crispiness of the coating and the texture of the fish were fine.
Dinner is in the slow cooker, chicken and stuffing with sweet potatoes……and cranberries, of course…….maybe my favorite meal.
I've got some leftover roast beef in gravy in the freezer, so I'm going to heat that and we'll have hot roast beef sandwiches with air fryer fries for dinner.
One of my Texas aunties always chopped up leftover beef in gravy and put it on toast and called it "shit on the shingles." I can't decide what to have tonight. I may walk over to the store and get some thinly sliced deli roast beef.
There has been a "SOS" discussion here before... creamed chipped beef on toast. It was common fare for soldiers during WWII. My mother made it; just a white sauce (gravy) with that jarred dried beef stuff. She called it creamed chipped beef on toast but my brother insisted it was Shit on a Shingle.
