Am about to head downstairs to cook a chuck roast with onions, carrots and red potatoes, It will take about 1.5 hours in the instant pot, after which the meat will be fall-apart tender and savory.
We're having the "traditional" southern New Years stuff for dinner... ham, blackeyed peas, sauteed cabbage and cornbread. Cheesecake for dessert.
I've had jacket potato, veg, pork luncheon meat and Yorkshire pudding with gravy, had the same yesterday (•‿•)
No idea yet, but I do have a can of black-eyed peas so that is a start. I think I will melt a pile of cheddar cheese on it and call it good. Peas and cheese! Happy New Year!

Plus I think you need to have either turnip greens or collards with them to bring good luck. Those are even worse. I'd almost rather have bad luck all year. .
Well, I ended up making a goulash. Browned hamburger and spiral egg noodles all cooked in salsa, then topped with parmesan cheese.
Jessica--when I read "jacket potato," it reminds me of a Youtube channel I watch occasionally. It's a British woman sharing her life raising a family and she posts recipes and cooking videos. Her channel is called Wright at Home and her name is Helen Wright; I believe she's in Kent. All that to say I have learned terms such as "jacket potato."
Yes, we usually call them baked potatoes. Once Helen cooked a "gammon joint" and that one stumped me for a while.
Leftover pork roast with mushroom sauce, mashed potatoes, steamed green beans. I also made a stollen today for the first time; I can't wait for it to cool so I can slice it. We'll try it out later with coffee.
I made a mini quiche last night to use up some of our left over ham ..it was nice I only use a small quiche dish now days ( used to make a lager one ) just enough for one meal,plus a snack for next day
