Mine has to be stuffed artichokes... I know the traditional way is to stuff them with bread crumbs and garlic and onion and cheese.. but being on Weight Watchers I stuff mine with Couscous... I prepare the couscous using chicken broth, dried onion, garlic, lemon zest and lemon juice. Each artichoke gets stuffed with one cup of stuffing.. I drizzle a little olive oil over the top instead of using grated cheese.. and a big artichoke will be a whole meal... for 10 WW points.. I will usually serve another veggie along with it.. Tonight it's going to be fresh asparagus cooked very lightly in the broth with the artichokes..
Beans and cornbread is one of our favorite meals, too, @Sheldon Scott . Bobby likes ham, and there is always a hambone left over afterwards; so we make a pot of beans with the leftover ham. I like to add collards or kale into the beans while they are cooking. It is not vegetarian since it has the hambone in there to flavor it; but I would lke it just as well if it were made without the ham, personally. Soups are more of a winterime meal for us; and in the spring and summer, we are likely just have something as simple as watermelon for a meal, especially when it is really hot. Mostly, I have low-carb foods; but beans are one of the slow-digesting carbs and do not spike blood sugar, or cause hunger-cravings for me; so as long as i do not have those a lot, I am fine with it.
My neighbors were huge gardeners. In the summer they would have what they called "garden dinners"... which consisted of everything they were growing at the time.
How about this Veggie Train... My son-in-law's Mom brought this to our Easter dinner yesterday. A little funny tid bit about my son-in-law's Mom...she and I are both named Barbara Lynn!
Straight from the garden: Baked potato, purple hull peas, fried okra, corn on the cob, collards(or any greens), beets, asparagus, hot peppers, onions, radishes, carrots, cabbage. tomatoes. Any combination or some of all the above.
I realized I've become way more of a vegetarian these days, although I do still eat some non-red meats. I didn't do it with the intention of being a vegie, just happened. So I have some faves now, that have no meat in them at all. The one I like, and is much less fancy than what the rest of you are describing, but it's a wrap. I love to cook black beans, jasmine rice (tried the brown jasmine, and really like it). I saute red onions, baby spinach, and whatever else is in the fridge, lol! Broccoli, oh, and love zucchini! Sometimes I will use a package of Tofu (comes baked already) instead of the rice. There is a Roasted Garlic one I love, or Sesame Ginger. I am learning to use seasonings/spices more, so I'll throw in grated garlic, ginger, a little, lite soy-sauce. I usually stuff the large, flour tortilla so full I have to super-glue to close it, just kidding I also add some hot salsa over the top, or sometimes I'll put it inside the wrap. I always heat the shell in the oven while I'm sauteing too I make a lot of stir-fries too, but the above is probably my fave vegie dinner.
Wow, to have my own garden! Sometimes it's exasperating to try and find, good vegetables at a grocery store. During the Spring and Summer though, there will be the Farmer's Market, yeehaw!!
