I ordered a Make Your Own Omelet (diced ham and cheddar cheese), hashbrowns and a banana nut muffin (for wife) this morning. Got all from Perkins and ate it all. Plus: pour myself a glass of 2% milk, juice glass of Cranberry 50% Juice and a cup of coffee.

So far this morning I only had a cup of coffee. Those fried potato patties sound really good, Are they like a hash brown? or a fried Breaded mashed potato?

My recipe calls for the stuff you use plus (1) egg for every (2) cups of taters. When I make mashed potatoes I always make extra so I can do a batch of potato pancakes. They freeze/reheat well, and are a great side w/gravy.

For break/lunch, bowl of chicken noodle soup and I toss in 4 prunes...it's about noon here. Cup of coffee.

I grew up with eggs and potatoes fried in butter, mom had them as staples.. so good, I don't eat
    potatoes in recent yrs.
