Today was my weekly food shopping day.. The problem is after going out and buying food for the week, I can't find anything to make for supper.. Besides, I am just a little pooped from running around and shopping.. I just don't feel like making a fancy meal.. I had bought some veal steaks, so I decided to grab 2 steaks and introduce them to my hot BBQ grill.. They grilled beautifully and were very good as well as being a fast and simple meal.. I sliced up some carrots and a parsnip that I steamed and smashed them with some butter.. That was a simple veggie as well..
@Steve North sidebar questions: do you do all the cooking @ your house? Also, you grill a lot...outside? Is cleanup time consuming?
Arlene.. I do ALL the cooking and cleaning up after.. I BBQ almost all year long as long as it isn't windy.. cold is OK but not below -30c.. My BBQ is on the patio just outside the kitchen patio doors.. Cleaning the BBQ takes exactly 10 seconds as all I do is brush the grill while it is still going and then I shut the propane.. I also do all the grocery shopping..
Arlene.. I find it much easier to BBQ rather than use the oven or stove.. Besides food that is grilled is supposed to be healthier than pan fried.. Much less of a cleanup after as well.. No pots or pans to clean.. No heat in the house or smell in the house.. When we have a power failure during the winter, I can still make us a hot meal..
supper tonight (Saturday) was chicken b/s breasts frozen and dry marinated before I freeze them.. I put them on the BBQ frozen.. Steamed green beans with sour cream..
Supper tonight (Sunday) was something different I tried.. I dry marinated 2 B/S chicken breasts and put them in a loaf pan... I then poured over them a can of cream of mushroom soup that I added 4 large sliced mushrooms to and some garlic.. Baked in the oven at 375f for about 45 minutes.. Served the meat and I put the sauce in a different bowl.. Veggies was steamed and mashed butternut squash.. The sauce went well with the veggies.. Breakfast: the usual, 3 egg omelette with 2 slices of bacon for my wife and 3 scrambled eggs for me.. Lunch: Nothing... No lunch
Supper tonight (Monday) was chicken thighs skin and bone in on the BBQ.. A salad with my dressing.. Frozen blueberries (thawed) with heavy cream..
Kroger had whole chicken on sale today, so I got a chicken and some broccoli to have along with it. I loved pan fried chicken, and there was plenty left over for snacking on tomorrow. We also had cold sauerkraut , as well as the steamed broccoli , and I think that having a fermented food like sauerkraut goes well with chicken. Kroger also had some of their packs of stir-fry veggies on closeout, so we can have stir fry with the leftover chicken, or maybe some liver, for another night's dinner. When we go to the fitness center, I always need some kind of breakfast first; but I don't want to have much food before we go. I usually have a low-carb protein food bar or milkshake, and that seems to keep me from feeling hungry while I am working out; but still not too full , like I would if I ate a full breakfast.
I do alot of barbecuing. Now that it is April I am sure I will be grilling at least one a week. I really enjoy it. However, one thing I need to do is grill a pizza. Next time I am wanting to eat pizza I am going to try grilling it. It can happen. I think most pizzas can be grilled also.
made a very large pot of real Jewish chicken soup.. We have been having that for the past few days.. I still have lots left and we will be having some tomorrow (Monday)..
I found some leftover shredded chicken in the freezer. Made some guacamole, heated the chicken with a packet of taco seasoning and cooked some corn tortillas to make chicken tacos. Cooked and folded the tortillas, added shredded cheese, then the chicken and topped it with guacamole. We each had two and have some left for today.
Last night (Wednesday) I made a tuna casserole for supper.. When I make any casserole, I load it up with a ton of veggies making it a one dish meal.. Unfortunately by doing it that way, I end up with ............. LEFTOVERS ........ Now I have a container of casserole in the fridge that will most likely NEVER be used.. After a few days, it will go into the garbage.. The problem is I make something different every night and I don't know when I will use it.. I don't eat lunch at all.. There isn't enough to serve 2 another time anyway.. Best thing to do is throw it out !!!
We never throw away food. Some meals are even better the second day. The tacos we had the past 2 days were made with leftover chicken from the freezer and of course the 2nd day they were leftovers again.
