Braised Beef Short Ribs

    I bookmarked a recipe for braised short ribs a while ago and finally remembered to buy some ribs this week. Tomorrow I'm going to braise them in a sauce that's mirepoix (onion/celery/carrot), butter, red wine, beef stock with a few herbs.

    I used to cook short ribs by braising them in a brown gravy sauce, usually with mushrooms and onion. I am still in sticker shock over the price of the ribs... $27 for 5. What the...???? :confused: Food is so expensive now I feel like it's almost not worth it to try a new dish; it costs too much to experiment.

    Do you cook braised short ribs? What's your recipe? Oven or stovetop?

    I am cooking something that I think is maybe similar. It is chuck riblets, and they were $2.94 lb, I think from Aldi’s. For some reason the label does not give the store, but it has to be either Aldi or Walmart, I am pretty sure .
    I am cooking ours in my new slow cooker, but using about the same things added (onion, celery, carrot), plus some red wine vinegar to help get the minerals out of the ribs, and some bay leaves and regular seasonings.
    Mine will cook all day, and we might eat some tonight, or maybe cook it more tomorrow with more veggies added to make a nice soup.

    Predictions of beef prices going through the roof are common. I have seen predictions of ground beef going to $15 a pound due to screw worm, feed prices and government interference.

    I've made short ribs a number of times, but always in the pressure cooker.

    Regarding prices: I saw beef chuck roast today for less than $5/pound. I didn't think to grab some and try pressure canning it.

    You should at least buy a couple for the freezer. I never miss a sale on meat.

    Ground beef is actually a little cheaper than it was before, right now. Maybe people are not buying it as much over the Christmas holidays, but it is under $3 a lb here at Walmart, for the cheapest hamburger, which is what we always buy, and it was almost up to $4 for a while.

    You must live in a lower cost of living market, Yvonne. I just looked up the local Walmart prices; ground beef is $4.73 a pound and the chuck ribs are $6.44 a pound. That's pretty much the same as the HEB grocery store. I got the HEB weekly flyer today and I see beef shoulder roast is on sale for $3.49 a pound and some pork cuts are also on sale. I should probably buy some eggs while they are somewhat reasonable.

    Did y'all have any of the riblets for dinner? How did the new slow cooker work? I'm going to braise my short ribs in a cast iron dutch oven in the oven. It's finally cold enough weather to have the oven on for a few hours.

    I got $4.64 for the 73% ground beef in a 1# pak at Walmart. The prepackaged (3rd party) beef chuck "riblets" are $3.94/pound.

    Kroger's got a roll of 73% burger for $3/pound. Short ribs (no chuck ribs) are $10/#.

    I have no idea how families can make it these days.

    We didn’t have the riblets yet, @Beth Gallagher . My daughter came over to visit, and we went to the Chinese place for dinner. I put them on low to cook overnight, so by tomorrow they should be very well done and delicious.
    The hamburger price depends a lot on the size you buy. A 1 lb package of the 73% is over $4.50 a lb, the 5 lb chub we buy is now $2.99, and a 10 lb chub is $2.77, and some of them say the price is a markdown.
    I get the 5lb chubs, and Bobby divides it up and freezes part of the packages.

    Sometimes, I compare prices with my son who lives in Eastern Washington State, and most of the prices are pretty close, although some things are much higher out there, like Pineaples. We have them here at Wally for around $2 almost all the time, and he said they are always over $4 out there, and his hamburger meat is a little higher, too, although not that much.

    I do this, too. I weigh out 1/4# and 1/3# patties and freeze them. If I want a burger, it's ready to cook. If I need bulk burger for a recipe, I'm not wrestling with a 2.18# frozen block...I just grab the right number of patties.

    I put the slow cooker on low and left it all last night cooking. This morning, I took the rib bones out, and had a nice cup of the broth for breakfast. I added more veggies to cook in the soup for later. It turned out pretty good, so i will probably buy this from Aldi again when we are shopping there. It has a nice, rich flavor !
    The only oven we have is the toaster oven , so we never cook anything there that takes over an hour; but it is definitely the time of year that it is good to have an oven on and heating the kitchen.
