What's For Supper?

    We had chicken fajitas for dinner (er...supper, I meant) and it just seemed to hit the spot. We had some chicken legs left over from the package I got at Kroger pre-cooked, and I used the meat and added the fresh peppers, onions, mushrooms and tomatoes.
    We added a little salsa and sour cream with chives on the top, and had it in a toasted tortilla.
    Simple and easy to make and very satisfying.

    I'm making taco salad for my daughter and myself tonight with ground turkey and low sodium taco seasoning mix.

    Will put the mixture on shredded lettuce since she's really watching her carbs. Then we can each add whatever we want to it...I'm putting some salsa and avocado chunks on mine...maybe a bit of shredded Mexican cheese.

    Friend brought the dog by for us to watch while they are in California.
    Not sure if there is a correlation, but having Pizza delivered. Never say 'no' to pizza...:)

    Easy supper tonight. Ham sandwhiched with cheese, chips, and drinks. Humidity has returned making me lethargic.

    I added some hot bbq sauce too the last of our pork roast and made a sandwich

    We made our monthly trip to Sam's Club today, so we are stocked up on food and coffee, and all of the things we buy in bulk, like the whey protein powder.
    Sam's had cod filet on sale, and we got some of that; so I am going to make some fresh tarter sauce, and we still have homemade coleslaw, and that will be an easy dinner for us tonight. We also have enough brussel sprouts for one more meal, and I will probably steam those as well. Bobby and I both really enjoy brussel sprouts !

    I'll have leftover taco salad and the boys have chili. Of course they both eat it differently.

    For the 12 yr old it's no beans but macaroni added to it and the 17 yr old likes it with beans and no macaroni. Shredded Mexican cheese blend on both.

    I'll make a salad of their choice. There are a million choices in this house when it comes to salad, don't even have to make it. Daughter buys premade single serving bowls of it.

    I finally made the stuffed peppers the other night. Instead of a meat and rice mixture or meat and mashed potatoes (I tried that once), I made fideo (short Mexican vermicelli) with tomato sauce, rotel, beef and spices, and then stuffed that into the peppers. I usually make about 8 and freeze half, but this time I only made 4. I have one left for tonight, and then I'll probably make hot dogs, because those were on sale last week at Kroger, so I have some on hand.

    @Chrissy Page Those crisps look yummy. I might have to try making something like that one of these days.

    They're too yummy, hope my daughter wasn't saving them for something because in the few days I've been here I've almost eaten all of them.

    She's not going to yell at her mom.....I hope. :)

    Baked B/S chicken thighs, baked potato and sweet peas with tiny onions and mushrooms. I baked the whole pkg of thighs (6) so we just need to add veggies for two more meals.

    I love Parmesan crisps...but I daren't buy them too often, because they are so moreish, that I can't stop eating them once I start.


    Last night for the first time in my life I had cornbread. It's never been available in supermarkets in the UK, but now they are selling it, so as I've always heard about it from American friends I've always wanted to try it.

    I made a Butter Chicken curry and used it to dip it into the sauce, and I was totally surprised at how delicious it was...so I'll be buying more of that for sure.

    Oh and for dessert I had Cotton Candy Grapes...yuuuummmmy...

    Yep @Holly Saunders , hard to stop eating. I left 2 so it doesn't look like I ate the whole box by myself. I could blame the boys but they didn't touch them, lol.

    Grew up with Cornbread being a staple for a lot of meals.
    Mom was a 'stay at home' and found time to bake.
    My new favorite for meals ( when we have the time ) are plain Scones or Yorkshire Pudding when we have beef.
    Introduced to these when we lived in the UK.
    When the meal is finished, I'll grab a Scone and cover it with Lemon Curd.
    Our favorite Curd is Tiptree and get it off Amazon. Pure Heaven.
