So .. What's for Dinner?

    Nearly all soup will freeze well (except my Potato soup), so its great to fix ahead for convenience later. I often make a lot of chicken-vegetable soup, put it up in single serving containers in the freezer, and before bedtime transfer one to the fridge for breaksfast. Been having that for breakfast for over twenty years now, and never got tired of it. Can't say the same for eggs and bacon, cereal, etc. Past year I have started doing the same for supper, so I'm always looking for a hearty soup like beef stew that will survive the freezer. Getting lazy I guess.

    Last night I had a dream I was fixing baby back ribs with potatoes in it. Never thought much about it this morning. Been over ten years since I had ribs, as I always go for ham. So this evening I stopped in at the Dollar Store, and they had baby back ribs, which they never sold before, so I thought:
    1. Good omen
    2. I'll be eating cheap tonight
    After getting them home it turns out that pound of ribs for a dollar was really $3.99. Not sure if that is cheap or not. Anyway, I got a deep casserole dish, poured in enough Kingsford Hickory BBQ Sauce to cover the bottom, threw in couple potatoes cut into inch cubes, the ribs on top of them, another cut up potato on top of the ribs, poured the rest of the BBQ over that, and a handful of shredded mozzarella sprinkled over it. Sealed it in aluminum foil, & slow baked it two hours at 325. I cannot believe how good potato in BBQ sauce is. The ribs will make sandwiches for a couple days, but the potatoes were the star, and none are left.

    I've just had dinner , meatballs and BBQ beef flavoured noodles...

    For lunch I had smoked trout on Malt bread

    Yesterday I had Spinach, pine nuts, and Bow tie pasta with Virgin olive oil and shavings of parmesan for lunch


    In the evening I had a Medium baked potato with grated Cheddar..


    It's 10.30am, so I've just had my brunch ( never have breakfast).. of one thick wholemeal slice with marmalade and a cuppa weak tea

    Last night I had a frdesh caught crappy fillet sandwich with tauter sauce,
    just one small fillet that just fit on a slice of bread when folded over.
    The fillet was fried instead of baked. Yummy. Could have eaten another.

    Last night I made baked duck legs on a bed of snow peas (and a few other veggies) in a hoisin sauce, and stuck it in the fridge to age, so I'll eat it tonight over brown rice and barley. Finally got a pint of ice cream, so dessert will be a butterscotch malt

    I like duck legs, and make them often along with hoisin sauce and pancakes..



    Last night I Made egg noodles, and organic flat mushrooms with A Pum and Hoisin sauce... ( I would usually use chopped skinned chicken thighs)..but it was late so I didn't want to eat meat so late.

    Is it my imagination or do we, here in the U.S., eat differently than those in the UK?

    What I do know, is that I made grilled burgers, oven cooked french fries (originally frozen) and a couple of ears of sweet corn last night.

    Nope Cody, there's plenty...PLENTY people in the Uk who eat , Burgers, French fries, etc on a regular basis, but most of them are overweight, have heart disease and or have Diabetes. There's plenty of people in the USA who don't eat French fries and burgers regularly, as well as the UK..

    I don't know, Holly. We stopped at a burger restaurant a few weeks ago, on a Saturday, and the place was packed and a line down the inside wall of the building to order.

    And, btw, not everyone here, or in the UK, are "health conscience" or even want to be. We have some pretty healthy looking young folks here that eat burgers and fries. Of course, after eating that kind of meal, they probably run to their fitness center and work it off (not really, but perhaps.)
    You should see all of the burgers, hotdogs and fries that are sold at baseball and football games here.
