Salsa chicken! Yum! I drag this one out every few months, so we don't get tired of it. Cook chicken breasts and a jar of salsa in the crockpot for several hours, or until it can be pulled into strings. Pull apart the chicken and add a can of corn and a can of black beans (both drained). Cook about another half hour on high, and serve with tortillas, lettuce, cheese and whatever else you want. It's so good, and so easy!
Tonight I am preparing ginger cashew mango curry served over basmati rice. A side of potato and mushroom samosas. Lemon sorbet for dessert.

You can finish the year on this one Steve. I took a container of unstuffed pepper from the freezer. I think maybe I'll open a jar of asparagus to go with it. I've got to go to the grocery today or tomorrow. We're out of eggs for the sweet potato pie.
I put some meat in the slow cooker not knowing what kind of meat it was.. It looked like a large chunk of meat with just a bit of marbling in it, with no bone... It turned out to be some MOOSE that was in the freezer from last year's kill... Boy was it ever delicious, tender and not dry at all..
Although I live in Maine, where I sometimes have to stop the car and wait for moose to get out of the way, the only time I've tasted moose has been in a chili cook-off, and I didn't like the ones that used moose meat as much as those using beef.
Last night (Monday) for supper I made chicken drumsticks on the BBQ.. I dry marinated them first for a few hours and then I introduced them to my HOT grill.. They seemed to like it as they turned out delicious.. To go with them I made half a spaghetti squash in the oven.. Coleslaw as well.. Carrot salad as well.. Breakfast: 3 egg omelette with 2 slices of turkey bacon for my Princess 3 scrambled eggs for me.. Lunch: Nothing more than BIG HUG and KISS from my Princess.. We almost NEVER eat lunch.. A diet pop, a cup of tea, or a fresh fruit at the most but usually nothing..
For supper tonight (Wednesday) I took out of the freezer a package of minced chicken (450g) or one pound...... I will most likely make a meatloaf as it is probably the easiest......... or ... I might make chicken burgers on the BBQ..... Which is also easy....... or ..... I might make a casserole with loads of veggies... which is not easy .. Something will be done with my package of minced chicken, ........ for sure !!!!!!! I have a turnip that I will make a turnip casserole to go with the meal as a veggie... I also have some coleslaw on the side.. Breakfast: 3 egg omelette with 2 slices of turkey bacon for my Princess.. A bowl of porridge with cottage cheese and sour cream for me.. Lunch: the usual, a BIG hug and kiss from my Princess....
I ended up making a meatloaf.. It was soooooo good that we both pigged out on it.. Steamed green beans with sour cream.. Coleslaw.. Sliced tomato with EVOO and fresh basil leaves on top..
Today is the easiest day to write about what's for dinner in America. I think a lot of us will be having similar menus. Turkey, dressing or stuffing depending on your family's traditional preparation of bread soaked in broth and flavored with just about anything, cranberry sauce - though why I have no idea, does any one eat cranberry sauce any other time of the year? It's kind of any acquired taste I think, some type of jello or jello salad, mashed potatoes, relish tray, oh yes and pie. I am sure I missed a few things because the items listed won't completely cover an eight foot table and Thanksgiving dinner always does. Dinner tonight is all about quantity and quality. And even if a shared dish doesn't come out quite right no one will say any thing because they are grateful to be included. Happy Thanksgiving
