Oh don't worry about it, yours sounds positively exotic compared to mine lately... I had 2 ready made smoked salmon and cream cheese crescents for lunch at work yesterday..( they are tiny)....and when I got home last night, after a very long day and sitting in traffic for an hour and a 1/4 I just couldn't be bothered to cook..so I just had 2 bacon rolls..and a cuppa tea.. sitting in front of the TV. Hubs gets in so much later than me, so he rarely eats at night, so almost always I eat alone..
Tonight I had a big bowl of home-made Carrot, Lentil, potato, broccoli and barley , and Ham off the bone soup....with crusty white bread...
Casserole Time.... I will make a concoction using B/S chicken breast, veggies galore, scoubie doos, herbs and spices, and cheese for a sort of a sauce..... This willl be a "one dish meal" which I love....
Scoubie doos are a form of pasta.. You could use any pasta but the fancy ones makes it a bit more interesting over the usual ones like elbows, shells, penne, spaghetti, or any other pasta.. SCOOBI DOOS is the proper spelling..... Google it ......
That casserole came out just delicious.. I loaded it up with veggies, diced B/S chicken breast, and shredded mozzarella cheese, then baked it in the oven................ Leftovers for another meal for the 2 of us....
Macaroni & meatballs. My wife used macaroni instead of spaghetti which I thought was a good choice. The meatballs were made from Italian sausage.
