The HOK ended up being a vegetable casserole with tuna in it... I love those one dish meals.... Yogurt for dessert...
Please email Arlene, @Steve North , and explain to her about needing a first/last name to register as a member. I messaged her and explained it, but since she is still using her Aradasky handle, I am not sure if she can still read private messages. The automatic registration process doesn’t acknowledge people who try to register with only a handle, and she apparently didn’t understand that she needed an actual first/last name when she was signing up here. I am sure she would be a great asset to this section of the forum, since she has been low carb for so long, and was the moderator before matrix closed his forum down, and I am looking forward to her joining us here !

Supper tonight (Thursday) was the lazy man's way out.... I had some homemade soup that I reheated ... I put on the BBQ some of my frozen chicken burgers and each a banger, store bought.. Frozen blueberries with heavy cream.... Breakfast was the usual... 3 eggs each.. Lunch was the usual ..... a hug and a kiss..... Now, that's definitely low carb.....
Saturday unfortunately will be another ...... HOK.... day... I will get back later when my ... HOK... has become something...
Hi Steve and Yvonne! I think I finally got it! LOL Anyway, Good to be here. I am still eating low carb all these so may years. I am not as strict as I used to be, I eat a piece of bread when I go out, maybe some sweet potato fries that have been fried in duck fat, but usually it is pretty low. Oh, sometimes I get a hankering for an apple and peanut butter for lunch, too. But my main reason for eating this way, is blood glucose and that is still very good, no trace of diabetes. If I do go off, and eat sugar, I ache for several days after. I really have to think hard when deciding to eat it. My birthday and Christmas are usually the times I do. Last night, I sautéed two beautiful, sweet onions in duck fat, added a Polska Kielbasa and two other smaller sausages, and a jar of sauerkraut. OH MY!!!! The kitchen still smell like duck fat and onions. I love it! I usually add onions to our meat, be it steak, pork, fish, or chicken. That is about all on the vege side that we eat at home.
We were on our week end outing today and was starving by 1:30. I saved calories by removing the bun, giving half my fries to hubby..barley drinking the over sugared tea..ick it was sweet.So I had a piece of fried chicken breast 2 pickles a tomatoe slice and what was left of my fries. Might have a snack tonight- no dinner.
Well...... My.... HOK.... became a stir fry in the wok using B/S chicken breasts cubed and marinated.. Onions sliced, mushrooms, red sweet pepper, broccoli, and sliced carrots was the veggie.. I added some vegetable stock for the liquid.. It came out just fabulous.. We both pigged out by eating the whole thing..... Frozen blueberries with heavy cream was the dessert..
Today (Sunday) for supper I will be making a casserole using minced meat.. Minced chicken with lots of veggies, a can of mushroom soup, herbs and spices, and cheese.... I made this concoction before and my wife simply loved it.. I even brought it to a friends house and she loved it.. Breakfast:... pancakes with S/F syrup...
Today, the fitness center does not open until 1PM, so besides my morning bulletproof coffee, I had a slice of the almond flatbread with an egg on top, and shared it with Poodle and Tootsie. Poodle is really strange about sharing food. He will sniff it and walk away, but when he sees Tootsie eating it, then he decides that he should have his, too. The almond bread has lots of protein and fiber in it, so it is healthy food for the dogs , as well as for me; so I enjoy sharing it with them, and it does not take much to have me feeling full and satisfied. After swimming this afternoon, I will have a large romaine salad with veggies and cheese for extra protein, and that will be it for me for today. I use Carb Manager to track what I eat and drink, as well as it picks up my exercise from the Apple Watch ; so I always know where I am at for the day.
Hubby is gone again. I walked three miles with friends this AM, had Avo, eggs and bacon for breakfast and will have leftover onions and Polska for dinner. I am going to mix peanut better and cream cheese together for my lunch tomorrow. Add more fat and flavor. I will eat a bit of that and a small apple for lunch each day this week, then chicken or pork for dinner, as I will be very low carb and cals while hubby is gone until Friday. I have coffee with heavy cream for breakfast. I am not a slim, young thing, my goal is to keep the diabetes at bay and stay in the same jeans. I do not weigh as I get too addicted to the numbers and then get moody. Oh, and over the last three years, I have lost 3 inches in height - back. Compresses what I have - I think my waist left with them. LOL
