It's 9pm I haven't had dinner yet!! Had a very tiring day, and fell asleep for an hour sitting on the sofa.. so I just made my self a freshly baked crusty roll with Italian cured ham... probably be up until very late tonight due to the napping, so I'll have something later!!
I buy most of my veggies out of Smith's Surplus bin, often quality looks good as the freshest stuff. This last trip, 4 nice bell peppers, 3 green, 1 beautiful red, product of USA! Today we made a trip to 99-Cent store for Cauliflower. Of course, I know stuffed peppers only as ground meat and rice filled. I had some misgivings, but the results were absolutely astonishing! Riced Cauliflower 1 Lb. chub of Safeway brand ground sausage, half a sweet onion, fried up: Halved peppers boiled a few minutes: The "Rice" stirred into the ground meat. It will be cooked only a minute or two: A bit of "zing" added, tomato sauce: Forum would not accept last images. Carried over into next post:
Pepper halves stuffed with meat mixture, almost ready for baking: The crowning touch: Out of the oven after 10 minutes, 350 F.: Dinner is served! Possibly the very tastiest stuffed peppers I have ever eaten, thanks to my wife!
It was good...Grilled Teriyaki Chicken Breast, with Sauteed Mushrooms, Baked Potato, Chili Bean Soup, Garlic Bread and a 32-oz beer to flood it down. Wife had Steak, as always. Hal
@Hal Pollner I had corned beef hash left over from breakfast. My grandson spent the morning with me and requested I make some. I'm always jealous of seniors who can still enjoy alcohol. I haven't been able to drink for years.
I made a batch of salmon patties for my daughter and myself. I don't mind eating them cold if it becomes my reality tomorrow.
We are going out to eat...yea! Outback Steakhouse... I know he will eat a steak but I am thinking shrimp with Aussie Fries and a tasty margarita
Last night I had smoked haddock chowder and I dropped a big handful of fresh spinach leaves in it at the end of cooking!! Deeelishus !!
I don't drink alcohol... but I love corned beef hash, but I can't eat it any more because it gives me horrendous heartburn
