Crispy Chicken BLT Salad from Dairy Queen, takeout. Pushing 800 calories with dressing. First time I've been inside any fast food place in about 18 months. Don't like drive thru.
Today , we went out to eat after my pacemaker appointment and swimming (we were both starving by then), and went to our favorite Mexican restaurant. Bobby had the steak/chicken/shrimp combo fajitas that come with all of the extras (2 plates full !), and I had the lunch special Chili Rellano with salad and beans. I love chips and salsa, and this place has amazing salsa ! We don’t go there a lot because it is a ways away, but I always enjoy it when we do go there.
-Salad -Leftover chicken burrito -Chickpea salad with bacon, poblano chiles, cojita cheese -Cheese Tostadas -Cheesecake w/strawberries
Actually, we had a change of plan. There was half of the green chile chicken enchiladas left over in the fridge, so they are getting heated with a bit more cheese and I'll make salad. I'm feeling a little shaky so I'll take the easy way out.
I had half a leftover chicken burrito last night. I went into Charlottesville on Monday to grocery shop (50 mile round trip) and could not find dry chickpeas for that recipe (Walmart does not carry them, Food Lion does not carry them, the Kroeger I was at had none (an empty shelf), so I bought a couple of cans thinking it would be no big deal. Then I saw that the soaked chickpeas were simmered with aromatics, and I was not gonna use poblano chilis, cojita cheese, fresh cilantro etc in a recipe where I skipped a flavoring step like that. So Tuesday evening I drove to a closer store I knew would have them (only a 40 mile round trip) and had dinner at the Mexican place across the street, saving the leftovers for last night.
I love canned chickpeas; just rinse and enjoy. I'd have probably used them instead of the dried ones regardless.
Probably the last lonely slice of frozen leftover pizza and a salad...and a fudgesicle. I ate half of that cheesecake over a 3 day period, so I cut up the rest and froze it. Why are all the things that taste so good...
I had planned to grill steaks and bake potatoes, but my hubby was helping his sister with funeral arrangements and didn't know how late he would be. So we'll have steak tomorrow and today it's Chipotle Burrito Bowls, chips and queso.
