Went to my local Mexican joint. They had pork belly tacos as a special. There were 3 of them when 2 would have sufficed...pork is so very filling. They were OK. Not bad, but I wouldn't necessarily order them again.
-Salad -BBQ chicken breast -Roasted Brussel sprouts with balsamic vinegar & rosemary -Mac & cheese -Fudgesicle
Its salmon pattie time ,we make enough to eat and snack on a few days. Along with fried or beans cole slaw. Hubby ask me which onion yellow or sweet,I said if its to eat raw its always sweet,if to cook its yellow,Or thats the way it is for me. Unless its a good purple or scallion.
I haven't decided yet, but I am thinking of something easy. Maybe I will just do a baked potato and melt a lot of cheese in it.
Gotta get off the porch (beautiful warm night) sitting here with only shorts, catching the last bits of summer heat and go make supper: Spinach salad topped with grilled tuna steak.
For lunch, I made sauerkraut with potatoes and veggies, and both of us had some. Tonite, I am just having an apple, low fat cottage cheese, and fresh pineapple.
I had the baked potato all loaded, but also baked a yellow crookneck squash. I cut it in half lengthwise, took some of the seeds out, and put in a 1/2 tsp of butter, and sprinkled it with salt and hot paprika. It was surprisingly tasty. I have baked butternut in the past, but never a small yellow crookneck. I will definitely do it again.
