Went to my local Mexican joint. They had pork belly tacos as a special. There were 3 of them when 2 would have sufficed...pork is so very filling. They were OK. Not bad, but I wouldn't necessarily order them again.

I haven't decided yet, but I am thinking of something easy. Maybe I will just do a baked potato and melt a lot of cheese in it.

Gotta get off the porch (beautiful warm night) sitting here with only shorts, catching the last bits of summer heat and go make supper: Spinach salad topped with grilled tuna steak.

For lunch, I made sauerkraut with potatoes and veggies, and both of us had some. Tonite, I am just having an apple, low fat cottage cheese, and fresh pineapple.

I had the baked potato all loaded, but also baked a yellow crookneck squash. I cut it in half lengthwise, took some of the seeds out, and put in a 1/2 tsp of butter, and sprinkled it with salt and hot paprika. It was surprisingly tasty. I have baked butternut in the past, but never a small yellow crookneck. I will definitely do it again.
