So .. What's for Dinner?

    Stir frying them sounds yummy. I wish I'd seen this before I went shopping. As usual, I forgot to add them to my list. Oh well, maybe next week I can pick some up and fix up a nice plate of them with whatever else I have on hand. I like the idea of a little cheese and nuts or maybe seeds, or both. I always have half n half on hand, so that's never a problem. Thanks for the tip, hopefully at some point, I'll actually remember to buy them, and can cook up both the beets and greens.

    I love chicken livers! I used to wrap a piece of bacon around a liver and water chestnut (canned), hold it together with a tooth pick and broil them.

    Last night, I made beef stew. I was wiped out by the time I was finished, so I'll probably make dessert today. It won't be anything fancy, just a simple apple crostata, which I love. Simple is good in my book, and it always comes out yummy. The beef stew was from scratch, but the crostata is going to be from store bought crust (fold out kind), and apple pie filling.

    I am planning on making salad with a burger and chips (fries for you Americans.) I know it's not the most complex thing but I don't have time for anything fancy - it's definitely going to be tasty though.

    For me, it was leftovers. I couldn't quite decide what to do with the hamburger from a couple of nights ago, so my husband made taco meat. That was last night. It was pretty good and there was a little leftover, so I just popped it into the microwave, added a little chopped tomato and sour cream on top and ate it with tortilla chips.

    Not the most nutritious meal - but quick and easy. Tomorrow night is going to be a big salad!

    It's funny, when my son was home, I would have been horrified to heat up some left over taco meat and call that a meal. We always had a good protein, a small amount of starch and at least two veggies and fruit. I'd always have the argument with my husband that potatoes are not a veggie whenever he would cook dinner. He thought that a handful of french fries should count as one of the veggies. It's taken me over 25 years to finally teach him that they don't count - and now the FDA has come out and said that for school lunches, potatoes and ketchup are consider veggies (can you imagine). Now the argument is starting all over again!! :D

    Getting lots of asparagus. My wife made some asparagus and ham soup a few days ago that was really good. Yesterday I made ginger- asparagus stir-fry with chicken which is always good.
    I saw a recipe somewhere for fried asparagus which I may try soon.

    Mal, leftover taco meat and chips sound good to me. I agree with your husband; potatoes are a vegetable. :p

    Oh, I wish I had an asparagus patch. I love fresh asparagus, can't stand the canned or frozen kind. But, boy, are they expensive in the store. Plus they come in a bunch, you can't just buy a few spears, and as I'm the only one in the house who eats it, they go bad before I can eat them all.

    My mother used to have a huge patch but then one year, the groundhogs fount it and started eating them all, and since they couldn't go to seed, the patch disappeared in a couple of years.

    And the eternal argument goes on!! :D I should post a poll, and then we can put it to rest.

    Yum, that sounds delicious! I haven't had a burger in quite a while, and I love fries. I like that you paired it with a salad. I do that sometimes, as well, it seems to (in my brain, anyway) cut the grease of the burger and fries. I make a decent burger, but there are a couple of excellent burger places here that have been calling my name, so I might have to pop in one of them soon.

    Believe it or not, I would love to have one of those toaster meat pies. I can't remember their name but they were similar to Pop Tarts. I don't often have a yearning for pre-made food but about 1/2 dozen of those in my freezer would make me happy!

    @Mal Campbell I agree with your husband....a potato is a veggie!

    You had to mention pizza, didn't you. I mean really - pizza?? Now that's all I'm going to be thinking about while I eat my leftover pork chop from last night! :(

    Life is just so unfair somethings (...more whining...) - why can't I have pizza for dinner? ;) Can I come over for dinner?

    Richard, do you mean a pot pie? Chicken is my favorite, but I occasionally like a beef pie, too. I like homemade pot pies too, but occasionally I pop one of these in and save some time.

    Both pizza and pork chops sound good to me. I guess it's leftover beef stew again tonight. But, I still have some apple crostata leftover, too. I'll have to go shopping, I think I'm about out of food for the month.
