Going out to have a meal they call Blueberry salmon....it's salmon with like a blueberry compote on it. Sides are butternut squash and garlic mashed potatoes. Since they don't have iced coffee, I'll be having raspberry iced tea.
At hubby's request, I'm making shrimp etouffee. He agreed to peel shrimp so I'll have to dig out my Ralph and Kacoo's cookbook for a refresher. It will be served over rice, with salad and garlic toast.
Leftovers from Wednesday; meatloaf, mashed potatoes. Added green beans, corn, cucumber and tomato salad.
Good cornbread and good chili are ... good. I'm proud of myself tonight for baking a nice-looking pumpkin pie. I haven't tried it yet but it looks promising. My next effort is going to be a sweet potato pie. I'll never do better than my mom for that and her other pies. I cheated and added coconut to the pumpkin pie.
I thought the same thing, so I had to look up recipes. I found several, including one that's topped with goat cheese: I've never heard of it, but if @Al Amoling recommends it, I'll add it to my list of things to make. One recipe says that the compote recipe for use with salmon is very bitter when tried on its own (since it's got balsamic vinegar), and you just need to trust the combination with the salmon.
I've been chopping and slicing and shredding all morning so I can make a couple of pizzas tonight without all that work at mealtime. The white pizza is made with Trader Joe's Fontina Cheese (cheap and melty) and minced garlic & olive oil (no tomato sauce), and the other's gonna be a homemade red sauce with pepperoni, veggies, fresh grated Cheddar and fresh sliced Mozzarella. I made the dough last night to rest in the fridge for a while. I grated a block of Parmigiano Reggiano and a block of Pecorino Romano to top it with.
We are also having Italian tonight, but decided to use some of our "gift card deck" and pick up an order from the Olive Garden. I'll probably have chicken marsala, my all-time favorite. The better half will have shrimp scampi.
