What's For Supper?

    For some reason, I'm still craving clam chowder, or seafood chowder. I made another pot, with clams and Atlantic cod, leeks, cubed red potatoes and little bacon, crumbled. I ate it for 2 days.

    Tonight I had Lamb Loin chops...cooked in a Beef and red wine gravy...with mashed sweet potato and swede...

    I also had 4 dark chocolate after dinner mints...*yikes* I'm sooo greedy.... :rolleyes::p:D

    I had some chili left over from a while back, baked a potato, poured the chili on the potato, topped off with shredded mozzarella.

    Last night I just baked a potato and had it with butter, sour cream and some shredded cheese. I'm not feeling all that energetic today, so tonight might be an encore, or perhaps a sweet potato, with just the butter and cheese.

    Thinking about potatoes, I just love them, anyway, anyhow, but I've never been too fond of sweet potatoes. I've heard red bliss potatoes have slightly less carbs, is that true?

    I could eat potato salad every week! Or twice baked, with cheese, onions and bacon .....heaven. But in truth, these things only once in a while for me.

    Today I have a pot roast with veggies in the oven...carrots, potatoes, onions, celery...low and slow :)

    I got a burst of energy last night and cooked some pork chops, so I'll be eating those for a few days, at least. I didn't do anything fancy, just brushed them with a little olive oil and added some rosemary and thyme, salt and pepper. I cooked them crispy, because that's how I wanted them, and served them with garlic potatoes and green beans. I might make some biscuits later if I get another surge of energy.

    Tuna sandwich with sliced olives and celery..bread and butter pickles on the side. I toast whole wheat bread. Dessert is going to be cantaloupe chunks.

    One day, I wanted the imported Polish baby dill pickles I had recently bought and chilled in the fridge, only I could not get the jar open.

    I ran hot water over the metal lid forever, used a rubber gripper, banged the lid with a knife, banged the lid on the counter, lather, rinse and repeat. Tried holding the lid and turning the jar. Nothing.

    By now, my tongue is hanging out for those pickles! I looked outside and saw a young man walking further up the sidewalk. I actually ran up to him and asked him to please open the jar. He did and we both ate a pickle there on the side walk.

    @Ruby Begonia next time try a bottle/can opener - the small one kept in a junk drawer or attached to side of frig. Just gently pry edge of lid for a second.

    Made a great meatloaf. Mmmm, the smell as it was cooking in the oven. :) Tossed salad & rolls.
