If you don’t like red beans, use all black beans or vice versa. Do things to suit your taste. I also blend my can of Ro-tel tomatoes with the green chilies using a blender because we like it more saucy than chunky; just personal preference. The leftovers are good. 1 small onion, chopped 2 bell peppers, chopped (I use 1 red and 1 green) 2 garlic cloves, minced 1 (14.5 ounce) Ro-Tel tomatoes with green chilies, UNdrained 1/2 cup salsa 1/2 teaspoon salt 1/2 teaspoon dried oregano 1/4 teaspoon black pepper 1 (15 ounce) can black beans, rinsed and drained 1 (15 ounce) can red beans, rinsed and drained 3 cups cubed cooked chicken breasts 8 large soft corn tortillas (you can use 6 inch tortillas too but may need 12 of them) 2 cups shredded Mexican cheese blend, divided Preheat oven to 350 degrees. In a large skillet, Sauté onion, garlic and bell peppers in olive oil until tender. Stir in the undrained ro-tel tomatoes with green chilies, salsa, salt, oregano, and pepper. Add beans and chicken and heat mixture thoroughly. Oil a 13x9 casserole dish. Layer the bottom with 4 corn tortillas. Spread half of the chicken mixture on top of the tortillas. Sprinkle ½ of the cheese over chicken mixture. Continue to layer with the other tortillas and top with the rest of the chicken mixture. Cover tightly with foil and bake for 30 minutes. Uncover; and sprinkle with remaining cheese. Bake uncovered 10 minutes longer or until cheese is melted. Let it set for 5 minutes. Cut into square pieces. Serve with additional salsa, sour cream, and tortilla chips.

I was wondering if a person could use a bag of tortilla chips instead of layering the corn tortillas ? It sounds delicious ! I like all of the things you put in the recipe and usually have most of them on hand, except for the corn tortillas.
I have never used ground beef in this recipe, but why not! That sounds good too! I would post a picture of the casserole ..... but still not able to post pics.
I really don't know? They might become to hard or tough? I wonder about crunching them up first. That could be good maybe! Or maybe add some of the chicken mixture to the bottom of the dish first and then layer with the chips and so on. It all gets mixed up in the long run.
