I like the ham and roast beef sandwich recipes. I like an egg salad and tuna with tomato sandwich. I dice round onions for my tuna mixture add a little lemon pepper and mayo. Generously spread the tuna mixture on my toast top with lettuce and tomato slices add dill pickles with a vitamin infused cold drink and low sodium chips. I should eat more of the healthier sandwiches, but don't. Your eggplant sandwich looks interesting, but I don't know if I'll try it. I got to stay away from cholesterol and sugar now too.
