Might anyone here have this recipe? It doesn't seem to be anywhere on the web. I found it decades ago in a very old Southern cookbook. Unlike most potato soups, it uses mashed potatoes instead of chunks of potatoes. Another main ingredient is evaporated milk. It's absolutely delicious, I'd really love the recipe if anyone has it.
In Ireland there's a potato soup made with milk - oh I misread this, thought you meant 'condensed' milk - what is evaporated milk ? Does it disappear before yer eyes
I found this in my grandma's old Betty Crocker book. It does use hot milk Potato Soup...the homey old fashioned kind sautee gently in 2 tbsp butter ..... 1 tbsp grated carrot 1 tbsp scraped onion Stir in.... 1 tsp salt 1/4 tsp celery salt 1/8 tsp pepper 2 cups hot milk 1 cup mashed potatoes or boiled potatoes put through a coarse sieve cook 20 minutes stirring occasionally 6 servings.
I didn't find anything called Carolina Moon Potato Soup either, @Janice Martin ; but when I looked for "mashed potato soup" instead, there are all sorts of recipes for that. Maybe if you look though those, you will find a recipe that is similar to the one that you remember ? I have made clam chowder and used mashed potatoes and either Creamora or evaporated milk to make it creamier and thicker , and your potato soup recipe sounds similar to that. @Patsy Faye , the difference between condensed milk and evaporated milk is that the condensed milk has been sweetened, and is usually called "sweetened condensed milk" at least here in the United States. Evaporated milk has just had some of the water cooked out of it, and is richer than regular milk, but not any sweeter.
I have several old recipe books because I sort of collect them, but I couldn't find anything by that name.
