Many types of salad dressing have a base of EVOO, which is simply extra virgin olive oil.

I usually make my salad dressings at the same time as I am making my dinner salad, and I always use EVOO , or at least partly the Extra Virgin Olive Oil, and the rest is a lighter olive oil.
I add seasonings (salt, pepper, herbs and spices) as I feel like, and often some Parmesan cheese sprinkles, and then a mix of balsamic vinegar and either ACV or the malt vinegar (which I have decided makes really good salad dressing), and just a dab of raw sugar so that the edge is off of the vinegar.
I really like this fresh and healthy dressing, and seldom make ranch, or any other mayonnaise-based dressing anymore.
I think that fresh olive oil dressing is becoming one of the most popular style of dressing.

What dressing do you use on your salad, @Hal Pollner ?
