    Onions contain fiber and folic acid, and B vitamins that help the body make healthy new cells. Onions are healthy whether they're raw or cooked, though raw onions have higher levels of organic sulfur compounds that provide many benefits.
    The enzymes in onions are attracted to moisture and can make you cry so have a small bowl of water between your chopping block and your body ... the enzymes will flock to the bowl of water and not many will bother to go the further distance to the film of moisture covering your eyes ...
    To peel the onion quickly top and tail it with a small sharp knife then make a shallow cut in the skin between the top and bottom ... then using your finger nails pick at the edge of that cut and peel away a thin layer of onion and pull it off taking the skin with it ...

    Pungent, spicy purple-red onion that's great for southern climes.

    A short-day, mid-sized onion especially suited for southern climes. Excellent for storing, the hard, thick, flattened pale red bulbs have pungent, spicy purple-red flesh.

    For alot of us Cajuns...this is our favorite onion. :)

    Hey, @Jeff Tracy , I just figured out what Aeiougland means. LOL!

    My brother lives near Vidalia County, Ga. That's the only place on Earth that true Vidalia onions can be grown with the exception of parts of surrounding counties. They are incredibly sweet. He brings me some when he comes to visit. Some people prefer other more pungent onions.

    We use onions in almost everything that we cook, either raw red onions (or the fresh green ones) in salads, or the white or yellow ones in soups and stews. Out west, we have Walls Walla Sweets, which are comparable to the Vidalia onions from Georgia. We mostly do not get the Walla Walla onions out here, since we are much closer to Georgia; but I do prefer the sweet onion when we can get those instead of the plain yellow ones.
    I can remember when the grocery stores had the 50 lb bags of onions and potatoes every fall, and people stocked up for the winter and put the bag in their cellar or other cool place.
    Now, even warehouse markets like Sam’s Club do not seem to have that large of bags, but they do have 10-20 lb. size ones, and sometimes, the large bags of carrots also.
