Peanut Pattys

    Microwave Peanut Patties

    [​IMG] This is a unique kind of candy that is really quick and easy. My mother makes these every year during the holidays.

    Cook time: 10 Min Prep time: 20 Min
    Ingredients
    2 c sugar
    1/2 c water or canned milk
    dash(es) salt
    1/2 c light corn syrup
    1 1/2 c raw peanuts
    2 Tbsp butter, softened
    1 tsp vanilla
    2 - 3 red food coloring drops
    Directions
    1. Combine sugar, water (or canned milk), salt, and corn syrup in a 2 qt. bowl. Bring to a boil in microwave on high (about 3 minutes). Stir and add peanuts. Return to microwave and cook another 8 minutes on high. Remove and add butter, vanilla, and food coloring. Stir until cool and creamy. Drop by teaspoonfuls onto waxed paper.

    I posted this recipe before I tried it. I tried it yesterday. I guess I did something wrong, they never got hard, just about had to eat them with a spoon. I don't reckon I'll try this again.

    Sheldon, that recipe looks similar to the way my mother used to make fudge or taffy, except the instructions are too rigid. You have to cook fudge/taffy just the right amount, or they will turn out either runny, or hard/sugary.. Even the amount of stirring can vary. It's tricky to get everything just right.

    It sounds too good to give up on.

    That's true. Also most candy recipes are a little finicky about humidity, etc. (I learned my lesson long ago trying to make meringues. :eek:) Sorry they didn't turn out, Sheldon.

    They did eventually harden and were pretty good but it took overnight. When trying to make patties they were just to runny.
