    Thanks, never thought about freezing lunch meats or buying roast beef.

    In the spirit of beating things to death until I get them right, I redid the homemade burger buns for lunch today.

    These turned out better. They do not give me heartburn as the other ones did, I assume because this recipe proofs the yeast and the dough rises for 2 hours + 1 hour. It also has egg and melted butter in it, which likely affects the chemistry.

    While this is my first time making this recipe, my Breville convection oven doesn't seem to do very well when I have more than one pan in it (meaning use more than one rack position at the same time.) I think that some things that are not at dead center are too close to the upper/lower heating elements. I swapped positions partway through the cooking time (as the manual recommends), but the buns on the upper position (the ones on the left in the pic) started to get black just 5 minutes into the 15 minute bake time. Tenting with foil helped. I'll have to play with it. Still beats firing up my oven.

    I also tried out a bun pan I bought a while ago. I think it's meant to do the tops only, or something odd like that.

    It worked pretty well. I bought it to make ciabatta buns so they don't spread out flat, but haven't yet tried it for that purpose. I'm not convinced that it's deep enough.

    Next on my list for lunch is learning how to make hot dog caddies.

    I really liked those. Not all fluff like the usual hot dog buns.

    And the dog is recessed in the bun so the toppings don't roll off of it all over the place.

    It's funny, every time I think of these and go on the web, there are current comments from customers begging for their return. I last looked every bit of 6-7 years ago and there were fresh comments then, and I looked today and there are comments just a few days old: "Please bring these back!!"

    One comment string says that these were made out of pita bread. So that gives me a starting point on making some. Perhaps a thick dowel rod covered in aluminum foil will make a good mold...

    Some places are willing to make a 'wrap', using large lettuce or cabbage leaf(s) ... That's a lot healthier these days than white or even wheat flour buns ....

    Earlier in the week I received one of my recipe emails, and there was one for Grilled Flatbread with Olive Oil and Za'atar seasonings (oregano, thyme, kosher salt, savory, sesame seeds, sumac.) Because I lack impulse control, it ended up on my table for lunch today. I could not find all the ingredients locally to make my own Za'atar, so I bought a bottle of it from Kroeger.

    This is a very good recipe.

    As you can see by the "Fresh Off The Grill" pic, I really need a new gas grill. The burners on mine are rusted through, so there are random flames interspersed with cold spots. Replacement burners have have been discontinued a long time ago. I researched and found another grill I want, and I keep waiting for Lowes to run a "10% Off If You Use Your Lowes Card" special. Dunno why it's taking them so long. Dunno why I am so cheap. The extra 5% might be all of $15. But it's the principle of the thing.

    Today was hot turkey & gravy on a homemade burger bun with a slice of smoked provolone, briefly shoved under the broiler.

    And crisps.

    I had a colonoscopy yesterday, so I didn't eat anything but breakfast on Monday, and began eating again at noon yesterday (Tue). My, what an ordeal!

    Only found 1 small polyp around the hemorrhoids area, thank goodness, and that is why the doctor sent me to entomology center, because of blood in the stools.

    Went grocery shopping and picked up a store-made turkey sub while I was shopping. I really like the sub rolls they use.

    Eating is getting to be a problem around here. Wife lives on EGGO pancakes. Today I had a banana,
    an orange, and a handful of blueberries for breakfast, lunch was an egg sandwich, which did not fill
    me and I added a peanut butter and jelly sandwich. I think I could live on breakfast burritos if I could
    find a good source. Cooking is both a problem and a hazard.
