The "pop" Composers, Imponderable Question

    Just heard Billy Joel's "Tell her About It", 1983, #1 I believe, Billboard Hot 40. I remember the song like it was yesterday.

    Troubling me for a very long time: Billy Joel wrote every one of hit hits himself. Now, I can imagine a guy penning music on a score, but what remains unanswered it this: Many instruments are playing at one time, when such a song is recorded. Some play in different keys, with different time elements from the overall score, some off-note, some sounding completely apart from the "run". Does the composer write the music for ALL these instruments, or just the general score, with some additional folks involved in putting all the sounds together? Any musical afficionados here who might know? Thanks! Frank
