Ugh, Cold

    It is not even to reach 32 degrees today in Huntsville, AL and to be in the mid teens tonight with a wind chill in the single digits. And tomorrow not to get out of the 20's. Now, I live in the South because I am not a fan of the cold. But at least it is not snowing or sleeting or such. I have big lovely pot of ham and navy bean soup on the stove to have with corn bread tonight for dinner.

    Sounds like great soup to have on a cold New Year's Eve @Joyce Mcgregor.

    I'm just going to pig out on something I would never consider eating normally and that is mac and cheese with Truffles.

    Trader Joe's sells it and I tried a bite when my grandson had it when I was there at Christmas....YUM, I knew that's what I was going to treat myself to on NYE. :)

    It's TV dinner size but it's considered 2 portions so the calories, carbs and sodium are off the charts for me but what the heck....

    I was thinking of cooking up some plain macaroni and stretching it but then it wouldn't taste as good.

    Not so cold here today @Joyce Mcgregor , because we have heavy rain so now we have temps of 51f today...11 deg C... a few days ago we had below freezing and snow. Home made soup is wonderful comfort food on a cold winters night, and especially at New years eve .


    Tonight I nearly had Mac & cheese, but I changed my mind and had fish pie that I'd made at Christmas and froze.. and had it with Roasted parsnips... deeelicious...

    The rain however hasn't put the off the firework displays I can hear whizzing and booming all over the place... and if I go outside I'll be able to see them all in the distance, but I'm staying in, in the dry warm house...

    The high today in Nashville will about 24°F
    Had tickets to the Titans football game, but gave them away.
    Way too cold for this old guy and the traffic detours due to
    New Years celebration downtown made it a no-brainer...

    Stay warm wherever you are.:)

    Ham and navy beans sound good, @Joyce Mcgregor . I'm going to have hog jowl and black eye peas tomorrow.

    Easy, now....easy...... I love peas and beans of all kinds, but jowls, well, not very much indoctrinated to such. The weird (I thought, as a kid) meals my Dad asked for, kidney, for example, taught me how his early childhood on the farm had showed their dependence on consuming the whole animal.

    Kidney, (whew, the stink was awful), liver, brains, stomach, "sweetbreads", lung, (jeez, I'd better stop). Sickening now as it was then.

    It is tomorrow now. I've got peas and hog jowl ready for the pressure cooker. The only greens left in the pantry is some kale and, of course, there will be cornbread too.

    It is in the very low 20s here in North Alabama. To be 10 degrees over night. I am not a big fan of heat and humidity of the Southern summer but right about now, I would welcome it~ And my silly little dog wants to go out again. She has lost her mind!!

    They are saying we might get snow Wednesday night and Thursday. If we do, it will certainly stick. Everything is frozen, including my birdbath. I dumped a big clump of ice out and refilled it. If it snows, things here could get interesting.
