This is a step up from the standard banana bread. I made it yesterday, and altered the recipe somewhat to suit what I had on hand. I also used 2 small loaf pans, rather than the 1 large pan, because I wanted to share the recipe with a friend who also loves coconut. I cooked them together low in the oven, on the second from the bottom slot for the racks. I wanted to make sure the tops didn't burn. Instead of macadamia nuts, I used dried cranberries. I greased the pans and dusted them with cocoa powder, just to add some richness. I will definitely make this recipe again. Yuletide Banana Bread Recipe
