I have lots of zucchini from our garden.. We had a severe frost last night, so I cleared out all the zucchinis from the plant both small and regular size, but no large ones.. Now, I am looking for a zucchini loaf recipe that has raisins that I can use as a desert item.. something on the sweet side.. Does anyone here have a proven recipe for a sweet zucchini bread ????
@Steve North A tough question, for me, but I'll ask my wife. She is the veggie expert around here! We rarely have no fresh Zucchini or Yellow Squash in our fridge. She buys it faster than I can eat it! Frank
I'm sorry if I cannot contribute to that zucchini bread recipe but I want to share that we had an omelet for breakfast this morning that included zucchini aside from the leftover corned beef and some potatoes. My husband is thinking of making zucchini soup, his own original recipe, with a base of Chinese white noodles called misua. the zucchini will serve as sort of garnishing. And although I cannot imagine how that soup would taste, I have faith in my husband when it comes to cooking. PS. Zucchini is quite cheap here during this season.
I found a recipe that has brown sugar and I added some raisins to it..... it came out sooooooooo good we ate the whole loaf in one sitting... I won't make that again as it is tooooooo good.... Seriously, It was the perfect recipe for zucchini bread.. If we pigged out, it means it was good.. Besides it was a treat for us having a desert bread ....
