    We are having take out cheeseburgers tonight while watching reruns of the British Baking Show on PBS. Even though I can't cook worth a darn, I like watching those who can.

    I have some tilapia fillets I'll be cooking up later. That will serve as dinner tonight and probably for the next few days. I'm debating about what to cook with them. I have some frozen vegetables I can make to go with them, and could cook either regular or sweet potatoes. I might make a little avocado and tomato salad on the side, and I have some watermelon for dessert.

    I made the tilapia fillets last night, and they came out delicious. I dipped them in milk, then a 1/2 and 1/2 mixture of flour and cornstarch, with a little salt and pepper, and pan fried them. instead of potatoes, I ended up making macaroni and cheese (just from the box, but it came out really creamy and delicious for some reason) and peas. I usually use cocktail sauce, but I mistakenly purchased Great Value Chili Sauce last time, and really love it, so I've been putting that on just about everything I'd usually use ketchup or cocktail sauce on, and it was delicious. I topped it with fresh squeezed lemon juice, and it was yummy. As planned, I finished off my watermelon for dessert. I will definitely have to get another slice of that next time I go shopping, it's so refreshing on these hot Summer days. I'll have leftovers tonight and tomorrow, then I'll figure out something else to cook :).

    Let's see. I have some time today, so what am I in the mood for?

    I think that tonight might be a good day to make some Italian seasoned roasted veggies. I like to make these off the top of my head, so they come out differently every time. I tend to use root veggies, like potatoes, carrots and parsnips, but other times add in things like summer squash and zucchini. I will brush them wit olive oil and add a dash of salt, pepper, and either mixed Italian herbs or whatever else I'm in the mood for. I like using thyme a lot.

    Now, what to go with that? I don't know yet. A trip to the grocery store might be in my near future.

    Still lots of tomatoes from the garden. I loaded the food processor with Tommy Toes and strained the puree and made two quarts of juice. A couple of large tomatoes were sliced along with an avocado, added several slices of bacon, some mayonnaise and put it all between two slices of 100% whole wheat toast. Some homemade pickles on the side and some very messy hands trying to hold it all together and I was a happy man. Washed it down with a mixture of grape juice and lemonade.
    We seem to have this a lot while we have fresh tomatoes.:)

    Sheldon, that does sound like a totally AWESOME meal ! I bet that I might like all of those ingredients and made into a bacon and avocado salad . I will have to try that, maybe with some of Bobby's blue cheese dressing that he loves (and shares with me, since I make it for him).
    We went to the fitness center , and today is the day that they do not open until after 1PM, and I had the kefir smoothie early for breakfast.
    By the time we returned home, it was almost 3, and I was starving; so I made a big bowl of salad. Lettuce, peas, cheese, and tiny canned shrimp with a mayo dressing.
    Bobby is having chicken, and probably some watermelon later on.
    Now, we are headed for the swimming pool to cool off .

    Not doing much today. No energy due to allergies so we ordered out for sub sandwhiches plus a chocolate cannole for my son.

    That is a hard one. I am doing Atkins and in the induction phase. I am having to plan what I eat very differently. All i am sure of is that it will be meat, onions, and green beans. I think.

    Deep fried chicken livers, sautéed onions, mashed potatoes, gravy, and some slices of tomatoes.

    Thinking of trying a new recipe for mashed cauliflower with cheese. It is low calorie and low carb. Plus it is easy to prepare.

    Last night it was a can of chicken noodle soup and some canned peaches. If I ever lose my can opener I'll starve.:(

    We do try to eat mostly healthy meals, but we still have our indulgences every now and then. Last night, Bobby barbequed some pork steaks that I found on sale at Krogers yesterday, and we had a salad with the blue cheese dressing, and steamed broccoli and cauliflower.
    Nice and healthy.
    However......... When I was at Kroger, they also had a strawberry pie on sale. It was a $10 strawberry pie; so that should tell you that it was an awesome looking pie. They had priced it for a fast sale at $4.99; so I bought it, and we had some of the pie for dessert.
    We seldom have any dessert, and if we do have dessert or a snack, it is mostly watermelon, or maybe fresh strawberries or pineapple, all of whcih are healthy and also anti-inflammatory foods. But a sweet treat every now and again is not going to be the end of the world, healthwise, as long as we eat healthy food the majority of the time, I think.

    Depending on how much energy I have later, it will probably be either a grilled cheese and tomato sandwich or tuna fish. I still have plenty of rice pudding for dessert, so I don't have to worry about that, and I'll slice up some cucumber and a small avocado for the side.
