    Mmmm, that sounds good to me although I don't have any bread but I do have low carb tortillas. I may make a quesadilla like that. I have a tomato that must be eaten today or thrown out tomorrow.

    You're welcome @Chrissy Page, and your post just reminded me that I think I have a can of refried beans I want to use up by making a batch of bean and cheese nachos. I might do that tomorrow. I'm putting off defrosting something until later in the week, so am using up my other food in the meantime. A quesadilla sounds good. I don't have any fresh tortillas, but have been planning to buy some soon.

    I watched the British Baking show on PBS a week or two ago. I thought it was fun. Mary Berry and her cohorts also judged an American holiday baking show last year. That was really a lot of fun.In my opinion The Brits although brilliant not surprisingly, seem a bit more constrained then their American counterparts..who are outspoken,stressed, talented, and never say die.

    Today I made some country style ribs in the pressure cooker, Baked beans from a can, fried okra and some thick slices of homegrown tomatoes. Then I made a sweet potato pie for dessert. Redi- whip on top.

    Cheese pizza, garlic knots, and Pepsi from Papa Johns. The garlic knots were suprisingly tasty.

    We had some tortillas that needed to get used up; so I cooked hamburger, mushrooms, mixed peppers, and the last zucchini, spiced it up good, added some enchilada sauce and shredded cheese on top, and then made enchiladas for dinner tonight. We topped them with shredded lettuce, diced tomatoes, and sour cream with chives.
    Leftovers for tomorrow, even.
    Bobby had watermelon for dessert, and maybe even some more of that delicious strawberry pie. Confessing..... I had some earlier this afternoon, too.
    That pie is just too awesome, and it is a good thing we only have stuff like that about once a month, or we would both be exercising all night and all day, working off that pie.

    @Yvonne Smith I love fajitas/tacos whatever you want to call them. You got me salivating! Must admit I had a pretty lousy supper tonight: crackers and dip. :/ Just was not feeling like cooking for some reason and that is what climbed out of the cupboard and fridge.

    Strawberry pie. Mmm. Do you have a recipe that you're willing to share? It sounds very yummy. I too have to avoid having things like that too often. I would want to eat a whole pie every day.

    The strawberry pie came from Krogers, @Diana Kristof , and was a $10 pie on sale for $4.99; and it literally begged me to rescue it from the display shelf. Being a good-hearted person, I happily took that beautiful pie right off the shelf, and put it into my cart.
    We DO try to eat healthy meals, and most of the time succeed; but occasionally Kroger puts one of their expensive desserts on the clearance shelf, and then we splurge.
    It had a regular pastry crust on the bottom, kind of a vanilla cream pudding for filling, and then topped with huge fresh strawberries in a thick glaze.
    Around the outside, almost a third thickness of the pie, was mounds of whipped cream.
    I don't know if that helps or not; but that is my best input as far as the recipe goes.
    If you have a Kroger nearby, you might want to watch for the pies to go on sale in your store.

    Oh, you know a $10 pie is going to be good. Mmmmmm. I was picturing it as a regular strawberry pie, but that sounds even better. I probably could find a recipe for something like that. But the idea of Kroger producing one for me is appealing too. Ha ha. Now maybe I will have to put "Strawberry pie mission" on my agenda for the next time my sister comes with her kids. There is no excuse for me to eat a whole pie. LOL

    I've never been crazy about pies and usually I'll have a sliver at Thanksgiving and that's enough for me but the whipped cream around the edge sounds good, love whipped cream.

    If I was visiting you, before you served that pie I would have eaten all the WC. :)

    Not double dipping though, don't worry. Would remove it with a spoon.

    Well, you know that I just got home from the office. It's a good thing that the traffic was not that heavy. I have prepared chicken drumsticks to be fried.. by our housemaid. And the garnishing is broccoli which I would fry in butter. Well, a simple dinner for us - fried chicken drumsticks and buttered broccoli. I'm actually in the process of thinking if Chinese soup would be okay to add. Hmm, maybe. And the rice is already boiling in the rice cooker. That means 30 minutes from now we would be eating dinner.

    What kind of Chinese soup @Corie Henson? Do you make it from a mix, or from scratch? I love hot and sour soup, egg drop and wonton soup, etc. I haven't made any of them in quite a while.

    Last night, I make a baked potato for supper. I didn't have much energy, so I just microwaved it. I topped it with butter, sour cream, shredded cheese, and salt and pepper. It hit the spot. I don't really feel like cooking today either, so I think I'll probably do what I had initially planned for last night, either grilled cheese with tomato, or perhaps tuna. I was quite disappointed to see that I have no refried beans on hand. I did find some pinto beans, though, so I might soak those and get them started to cook for tomorrow.

    So far, I have eaten 2 boiled eggs, a Dr. Pepper and a Coke Zero. Seeing it in writing makes me cringe a little. Maybe I will eat roasted asparagus at supper to negate the Dr, Pepper.

    @Diane Lane, the Chinese soup is the one in the packet that needs just water to boil for 5 minutes and then add one egg and stir. The flavor is crab and corn. It was a pretty good dinner last night for everyone. But I did not eat rice anymore, just the fried chicken drumsticks and the broccoli and yes, a bowl of Chinese soup as well.

    There are occasions that we have tuna for a meal. We always have canned tuna flakes in the food cabinet intended for breakfast. But eat sauteed tuna with rice and seldom with bread. I also love it especially when I think of the cholesterol level which said omega whatever from tuna is good for my "good" cholesterol needs.
